23.01.2022 I've seen so many pictures posted of big quantities of shit (sorry, no other word for it but shit) quality fish in the last week or 2 in the calm weather so I t...hought I'd put a few up of what fish should look like. Bit of care and respect goes a long way. It's still strongly ingrained that if you catch/caught a shitload of fish you're a legend. 10.01.2022 Heres an easy recipe that's worth a go. From Harry Foster this one. Obviously this is trout, but any smaller fish would be suitable- small cod, hussar, stripey,... grassy, moses, whatever. 1. Scale and gut the fish, then butterfly and debone. Link here where Harry gives a demo on butterflying and deboning one of our trout. https://10play.com.au//harrys-masterclass-h/tpv200423teuza 2. Marinate the flesh side with Kaeng Kua curry paste. Never seen the brand before myself, but I'd imagine you could use just about any curry paste. 3. In a small pot, fry off half cup of the same curry paste. Add a tin of coconut milk (fresh coconut milk would be even better), a bit of tamarind paste, bit of palm sugar and a bit of fish sauce/oyster sauce Add those last 3 in whatever amounts depending on how you like the taste. Keep simmering to whatever thickness you like. 4. Oven at about 220-230, bake the fish for 20-25minutes, or until slightly undercooked. Remove from the oven and rest it for 5minutes. It will keep cooking, that's why it has to be slightly undercooked when you take it out of the oven. It's very easy to overcook fish. This was about 1kg so bigger fish for longer, smaller fish shorter time. 5. Tip the sauce over the fish and then top with garnish. This was fried spring onion, finely chopped kaffir lime leaves and lemon grass. Wombok salad goes with it well, but you could have any salad or veges I guess. Bloody tastey, easy to do, no waste. 09.01.2022 2020 TILAPIA TOURNAMENT: TREMENDOUS TURNOUT TAKES 2,000 TILAPIA FROM LAKES | Native freshwater species in Cassowary Coast waterways can gulp a sigh of relief ...this week thanks to the 2020 Tilapia Tournament which saw nearly 2,000 of the pesky Tilapia removed from Warrina Lakes. Five hundred people from throughout the Far North registered to take part in the Tournament, catching an extraordinary 527KG of Tilapia which are being recycled into compost for the Johnstone River Community Garden. The fishing competition was redesigned by Cassowary Coast Regional Council this year to accommodate COVID-19 restrictions in a week-long tournament during school holidays, Monday 21 to Sunday 27 September. In 2019 the Tilapia Tournament was a single day event, removing 260 fish from Warrina Lakes.
