12.01.2022 4 dozen cupcakes made and decorated for an "Alice in Wonderland" themed 1st birthday party on Saturday. 6 dozen mini quiches made, plus 5 dozen sausage rollls. 11 dozen tea sandwiches later and all done!
09.01.2022 Today's lunch entrée...crayfish salad with preserved lemon and dill mayonnaise (home-made), with cherry tomatoes, mango cubes and snow pea sprouts. I was really pleased with this dish, particularly as I didn’t have a recipe and made it up as I went along... PS. For my American friends, an entrée here is what you call a starter...
07.01.2022 Dinner tonight. Coquilles St Jacques...sometimes you cook something a little bit old-fashioned, and you realise why it is a classic! Scallops, baby mushrooms, spring onions, with a creamy sauce enriched with a reduction of stock and wine in which the mushrooms and scallops were poached. Topped off with crispy panko breadcrumbs with Parmesan cheese and butter. Divine! I may have added some garlic bread....
06.01.2022 Crab cakes made in the airfryer...this is a new type of cooking for me, and I am cautiously impressed at this point. These crab cakes were delicious, although I would probably brown them a little longer next time. But crispy on the outside and creamy on the inside...works for me!
