09.01.2022 Now is the time to support our local fresh pineapple industry and buy pineapples to make incredible dishes your family will love!! Imagine dishing up lovely ham steaks with freshly grilled pineapple slices! Or nice juicy chops, or steak, accompanied by totally yummy homemade pineapple relish/chutney! The kids will love homemade pineapple jam on toast for breakie or on fresh bread for lunch. Have you tried a slice of fresh pineapple on bread as a sandwich? Try it...it's a...mazing...you will be eating pineapple sandwiches forever!!! If the pine is a bit tarty a slight dusting of table salt sweetens it up! Today we will include, in this post, the recipe for pineapple relish/chutney and tomorrow the recipe for the jam! PINEAPPLE RELISH (If you wish to make less-simply halve or quarter the quantities!) Ingredients; Pineapple (slightly to full ripe)- 3kgs (Depending on size; 2 pines makes 1kg when peeled and diced) Onions- 1kg Garlic- Minced-4 teaspoons Cayenne Pepper-1 teaspoon Curry Powder- 1 tablespoon ( half curry and turmeric is a great flavour) Mustard (Sauce or Powder)-1 tablespoon Brown or Raw Sugar-1kg Vinegar 1litre *All spoons measurements are level, add more if your wish! Method: In a large saucepan; finely dice pineapple and slice onions. *Pineapple, when cooking, doesn’t breakdown as other fruits do, a fine dice is better. It’s ok to use the core, if you wish, but it must be sliced very small and finely. The core is actually very healthy and has the most Bromelain which contains protein-digesting enzymes. Mix them together and then, using table salt, sprinkle the salt over the mix, replace the lid and leave sitting for 3 hours. In a large jug; add all other ingredients stir, cover and set aside in the fridge until cooking. Once the pineapple/onions have ‘sat’ for their required time, stir in the other ingredients and rapid boil (no lid on pan) for about 2 hours, stirring consistently (or the pineapple will sink to the bottom and burn) until the juice has evaporated a fair bit. The result should be that the relish has a thick consistency. The remaining juice should only just level with (a bit under is fine) the pineapple/onions, as due to the brown sugar, it cools to a thicker consistency. When bottling up stir the relish, as each bottle is filled, so that you get a good consistency in each bottle. Allow the mix to cool down a bit in the bottles before sealing them. *Hint- If you don’t already keep your onions in the fridge, sit them in the freezer about a half hour before cuttingit stops the vapour from causing irritated eyes. *Hint- If the pineapple hasn’t broken down to the consistency you prefer, a light going over with your potato masher works fine! Finally...if you try the recipe and have any questions..just message for the answer!

07.01.2022 Into the Pie Maker fad at the moment? Here is a yummy dessert pineapple cake recipe. Serve with vanilla ice cream or custard. ' Pineapple cakes!!!' ... Recipe Ingredients 125g butter, at room temperature. 1/2 cup caster sugar. 2 eggs. 1 & 1/4 cups self-raising flour. 1/3 cup milk. 425g canned pieces, drained. 1/2 cup brown sugar, approximately. Method 1. Using an electric mixer, beat butter and caster sugar in a medium bowl until light and creamy. Add eggs, one by one, beating after each addition 2. Stir in flour and milk 3. Turn on pie maker 4. Put a small dollop of butter or marg in each base, sprinkle brown sugar in each base (approx 1tsp each). Arrange pineapple pieces, over sugar, I put 5 pieces in each 5. Spread mixture over pineapple, fill almost full, smooth top, close lid 6. Time for 6mins or until a skewer inserted comes out clean. I made 12 cakes Hint: wipe PM out with paper towel immediately after turning off while still hot, as it's sticky

02.01.2022 We guess most would have assumed by now, but we can officially inform the Community that due to COVID-19, this years Festival has been postponed until September 11th next year. We will be keeping this page updated with yummy pineapple recipes and info from our local farmers. Keep supporting our local farmers by adding fresh pineapple to your shopping every week. 01.01.2022 How does Pineapple Soft Serve or Pineapple Sorbet sound as a great dessert? Both recipes are here for you to try and enjoy! Simple to make and tastes positively yummy! PINEAPPLE SOFT SERVE ICECREAM INGREDIENTS... 1/2 cup Heavy Whipping Cream 1 tbsp Icing Sugar heaped 1/2 tsp Vanilla Extract 3 1/2 cups Vanilla Ice Cream 1/2 cup of blended soft fresh pineapple (drained of juice if necessary) METHOD Whisk the whipping cream in a large bowl with a handheld mixer until soft peaks form in the cream, around 2 minutes or so. To this add the sugar and vanilla and continue whisking until the cream has stiff peaks. Be careful not to over whip! Using a spoon or silicone spatula, fold through the softened ice cream and pineapple until it is well combined, and then pour/spoon this mix into a large, resealable freezer bag. Freeze until semi-firm (4-5 hours depending on freezer) and then when ready to serve take the bag out and massage it until it’s soft all over, for about 1 minute. Cut the corner of the bag using some scissors and pipe into an ice-cream cone or bowl. Top with more pineapple or another preferred fruit and serve immediately. PINEAPPLE SORBET- SERVES 4 INGREDIENTS 500grams frozen fresh pineapple 1 1/4 cups almond milk (or orange juice) 1 tablespoon honey (optional) INSTRUCTIONS In a high-speed blender or food processor, combine the frozen pineapple, almond milk and honey, if using, then blend until a smooth, ice-cream-like texture is achieved. For an authentic presentation, transfer the frozen dessert to a large plastic bag, and cut off the tip to create a piping bag. Pipe the pineapple whip into 4 dishes and serve immediately! Any leftovers can be frozen in an ice cube tray and used in smoothies later.

01.01.2022 Help our local farmers and buy fresh pineapple while you are out shopping. Locally, the Pace truck will be up on the Highway near the Balgal Beach Rd, turn off, on Sunday. Put some cash aside and pop up and buy a few pineapples, make a heap of jam and share it with friends and family. This is an easy, and very yummy, Pineapple Jam recipe. If you want a smaller portion simply half the ingredient amounts. Pineapple Jam... 2 kgs of Pineapple peeled, cored, chopped finely (about 5 average size pines) 1.25 litre (5 cups) water 2/3 cup (160ml) fresh lemon juice (bottled is also fine) 1.3 kilogram (6 cups) sugar (white, raw or jam sugar is fine) Method; Combine pineapple, the water, and juice in large saucepan; bring to a boil. Reduce heat; simmer, covered, about 1 hour or until pineapple is soft. Stir in sugar; stir over heat, without boiling, until sugar dissolves. Boil, uncovered, stirring, about 30 minutes *Pineapple doesn't always break down as some fruits do therefore to determine your own preferred consistency you may need to 'pulse' the cooked pineapple in a blender or food processor until it breaks down to the consistency you like.**Note...due to the natural juice in the pineapple there may be a bit too much juice, so strain out as much as you prefer. Pour hot jam into warm sterilised jars; seal while hot. When cooled store in the refrigerator until use. See more

31.12.2021 Sadly....The Rollingstone Pineapple Festival 2021, pencilled in for the 11th of September, has been cancelled. After consultation with relevant authorities, the Committee discussed at length the feasibility of continuing with Festival plans for this year, in relation to covid public safety requirements, if the present outbreaks continue or escalate. The management of requirements for an event that could draw over 4 to 5 thousand people transitioning in and out of the event ov...er the day would be huge. We as a Committee also took into account the large number of caravans, rv's and campers that are arriving in our area daily and a majority of these do attend the Festival. These are an unknown quantity and we could not be assured that they are fully vaccinated or free from covid itself, having travelled previously from various areas touched by covid. We could not have anticipated the amount arriving in our area at this time, therefore we need to put community safety to the forefront. We have discussed planning for the Festival in 2022, as by then, hopefully, a very large percentage of the population should be fully immunised and have had booster injections, border and city restrictions, hopefully, should be finished, allowing travellers more freedom to attend the Festival without being concerned that they may not get home again. Thank you for your understanding and we shall be in planning, in the new year, for a great Festival 2022! In the meantime we shall keep the page updated with 'all things pineapple' for you to enjoy!
