Eat one on the side of your congee or get a few and call it breakfast. Options will change with the seasons.... but all served with ‘rough rice special sauce’ (aka fermented shiitake tare). 10.01.2022 Start your Sunday’s right. Spring market menu is go. The main event is rough rice, my namesake. Australian grown biodynamic (and rain fed) brown rice with greens (rainbow chard, broccoli leaves, kale, spring onions), toasted pepitas/sunflower seeds and garlic oil. Wok fried and topped with a fermented tumeric + lime leaf ‘dhal’, homemade yoghurt, pickles + spring herbs. Optional extras; fried @ashbrittlefarm egg / stir fried @heirloomtony sugarloaf cabbage / braised @longname...farm pork. Oh and hot sauce, of course. Things on sticks will be mixed up over coming weeks as produce changes - this week we have octopus, wallaby + shiitake (all brushed with a junmai sake + fermented shiitake tare). And for the first time... freshly shucked angasi oysters from @theoysterprovince w a choice of kosho oil, wild nori vinaigrette or lemon + pepper. Mix it up.. there are no rules. See ya Sunday.
