Pick large parsnips, mandolin slice, take the time to lay them out on a lined baking tray- drizzle #oliveoil sprinkle #GoodSalt - be generous Bake till edges brown & vegetable is cooked, will harden (go crunchy) on standing .. just try and stop at one ! 15.01.2022 So many #capsicums & #eggplants taking over my fridge lol tonight I teamed them up.. #babaganoush #grilledcaps I’m always stuffing capsicum with something - this was something a little different and it freed up my veggie draw ! Will go down a treat with a #rocket and #feta salad .. .. #babaganoushRecipe - #FODMAPFRIENDLY !!!!... 4 eggplants - slice in half, score, lay flat on lined baking tray, drizzle with Garlic oil bake for around 45 mins on 170ish (make sure it’s cooked through) Scoop out flesh, smash with a fork (can use a good processor) add a generous Tbs of #tahini , #Cumin - 2tsp #salt , #lemonjuice 1/2 of.. Sprinkle of #chilli done perfect as a dip or spread ! See more
