06.01.2022 Saffron is a spice derived from the flower of Crocus sativus. Each flower produces only three threads (stigmas) of saffron, and it blooms for only one week each year. The saffron must be harvested only by hand in the mid-morning when the flowers are still closed in order to protect the delicate stigmas inside. It takes about 170 flowers to produce just one gram of saffron.

St lucias day falls on December 13th and this day is also known as the Festival of Light and this is a day of celebration in Sweden , just as important as midsummer. Young girls are dressed in white robes with a red sash where one girl is selected to be Lucia and she wears a crown of lit candles and the others carrying a single candle light. Lucia is seen as an ancient mythical figure who is seen as a bearer of light in the dark winters days. Most people buy or bake a saffron bun called 'Lussekatts' on at Lucias day ! These buns flavored with saffron and dotted with raisins and are lightly sweet and buttery with a vibrant yellow colour from the saffron-infused dough. #lussekatts #christmas
