22.01.2022 So this is 49. Wow what a ride. Some really interesting things have come up for me in the lead up to today. I have had a lot of flash backs to my 30th birthday. My doctor found a lump in my throat just a few days earlier. Instead of planning how I was going to manage my hangover after the big night out, I was thinking about what would happen to my kids if it turned out to be the big C. Fast forward 19 years and how incredibly lucky am I to have raised my babies, married ...the most beautiful human, found soul enriching work and deepened my connection to my family and dear friends. I wonder if I would have had this life if I didnt have cancer. I wonder why I have been blessed to live all these years when so many beautiful people have left this world so prematurely. I dont know why I am still here but I do know for me the trees are greener, the stars are brighter and my heart is so full of gratitude for all I have. 20.01.2022 This is a beautiful spice mix for this time of year to keep the air and space elements in check Especially good for anyone suffering gas & bloating. Autumn spice mix... 2 tablespoons whole fennel seeds 1 tablespoon whole coriander seeds 1 tablespoon whole cumin seeds 1 tablespoon ground turmeric 1 tablespoon dried basil 2 teaspoons powdered ginger 2 teaspoons salt 1 teaspoon asafoetida Dry roast seeds in pan on stove top individually till aromatic, cool then grind fennel, coriander, cumin and basil using an electric grinder or spice mill. Pour into a bowl and stir in turmeric, ginger salt and asafoetida. Transfer to an airtight container and store at room temperature. It is best to use the mixture within a month for the best potency. Use it in dhals, soups, kitchari, rice, sauces, salad dressing and curries. 17.01.2022 Mother nature knows what our bodies need and produces food that is suitable for the local climate and season, so it makes sense to eat local produce, it also tastes better and is good for the environment. This summer eat plenty of fresh, locally grown fruit and vegetables. If you eat flesh protein fish and lean meats are a good choice. If you can tolerate dairy it can be eaten in moderation. Have a good breakfast that will keep you satisfied till lunchtime, rolled barley i...s an excellent grain for this time of year. Make lunch the largest meal of the day, a hearty salad with some protein and grain is a perfect choice. Eat a smaller plant based meal before the sun sets to support optimal digestion. Our digestive fire is strong during the hotter months so it is best to reduce intake of heating spices including chilli, mustard and cayenne and avoid salty, greasy, overly cooked, excessively rich foods. Enjoy Spring Spice Mix Ingredients:... 1 teaspoon coriander seeds 5 grams dried ginger root (available at Indian grocers) 1 teaspoon fennel seeds 1 teaspoon cumin seeds 1 teaspoon whole cloves 1 teaspoon whole peppercorns 1 teaspoon cardamom pods 1 teaspoon black mustard seeds 1/2 teaspoon fenugreek seeds 2 star anise 1/2 teaspoon dried red chili 2 bay leaves 1 teaspoon turmeric 1 teaspoon cayenne pepper Dry roast each ingredient (except cayenne and turmeric) separately in pan until fragrant. When cool grind one spice at a time in coffee grinder. Once ground add turmeric and cayenne and mix well. Store in airtight container. 02.01.2022 Here is a delish quick and easy recipe to keep you nourished and warm on these chilly nights. Pesto Minestrone Ingredients... 1 tbsp. coconut oil (or ghee if not vegan) 2 medium carrots, chopped 1 medium leek, thinly sliced 3 large red potatoes, chopped 8 cups vegetable stock 1 bunch broccolini, stems sliced and heads chopped 1 can butter beans rinsed and drained 2 tablespoons vegan basil pesto Fresh cracked pepper for serving Nutritional yeast for serving Directions 1. In a large saucepan, heat the oil or ghee on medium flame. Add carrots and leek, cook for a few minutes to soften leek. Add potatoes and vegetable stock. Turn up heat until it reaches the boil then reduce heat to simmer and cover with lid. Cook until potatoes are tender. 2. Add broccolini and simmer until tender. 3. Stir in butter beans and pesto to heat through. 4. Ladle into bowls and sprinkle with nutritional yeast and add some cracked pepper to taste. 5.
