24.01.2022 SAVE THE DATE - NOVEMBER 21ST Our executive chef @chefnamhoonjung is cooking a Korean Royal Cuisine themed degustation dinner ! But what exactly is "Korean Royal Cuisine" ?... Korean royal cuisine was considered the highest form of dining. It was the style of cookery within Korean cuisine, traditionally consumed at the court during the Joseon Dynasty, which lasted from 1392 until Japanese colonial rule in 1910. Royals at this time could expect to eat five times each day, with early morning and late evening snacks bookending three carefully planned, elaborate meals. Court cuisine was built around the idea of seasonality and balance, and full meals consisted of two kinds of rice - white and sweet - two soups - jeongol or sinseollo - two different types of hot pot, 12 side dishes - kimchi - dipping sauces, and often more, depending on the occasion and season. By the time all the courses had been presented, the table was covered in dishes, and all were served with the special metal chopsticks that suspicious royals believed would turn black to indicate any poison in the food. To represent balance and harmony in the universe, each meal would highlight five different cooking techniques; from finely sliced raw fish, to braised meats, to fried pancakes, and incorporate five different colours in the vegetables, fruits, meat, and seafood - sometimes all within the same dish. With Our Walls, Your Art, we give local artists the opportunity to display their work in a safe free space, for all of you beautiful customers to admire, and acquire.... This month, our featured #artist is Cheryl Lee. Cheryl's journey into started at a very young age. She would spend hours reproducing her older sister's work, doing her best to replicate it to perfection. She then pursued art as a hobby, sketching people on the beach or from photographs. After a while, she enrolled in evening classes at Kuring-Gai College where Denise Summer taught life drawing and portraiture. Cheryl was inspired, and a few years later, enrolled at Julian Ashton Art School at Georges Heights, where she studied under the guidance of Murray Bird. She attended multiple other classes, studying different techniques with teachers that were a great inspiration for her. With the recent global events, art has proven itself to be a wonderful therapy and escape for Cheryl, and she finds most pleasure in painting charcoal portraiture and watercolour. When in the company of elders, take your seat according to your age rank with the youngest person closest to the door. Don’t start to eat before the elders ! After they have picked up their spoons, others can begin to eat. And try to keep pace with elders while eating. It could be considered rude to show that you have finished your meal before elder people have. I...f at all possible, keep eating a bit until they have finished their meal. Tell That You Will Eat Well. Before taking your first bite, it’s important to say that you will eat well, as a way of acknowledging that you are looking forward to the meal you are about to have. In Korean, this is expressed with the words Jalmeokgesseumnida (), which in English would translate to ‘I will eat well’. This is a kind compliment to the chef, and it’s always nice to show gratitude! Sprinkle this phrase into your Korean dining experience and impress your host. Utensil Etiquette. When dining in Korea, there is even specific utensil etiquette that you should observe. You should hold your spoon and chopsticks in different hands. Also, try using only one utensil at the time this usually means that you’ll decrease the likelihood of spilling food on yourself as well. Alcoholic Drink Etiquette. Especially in the case of an alcoholic drink, pour drinks for others first, and let someone else pour yours. If you see an elder with an empty glass, try to fill it up as soon as possible as a common courtesy and a sign of respect. If your elders offer you a drink, unless there is an extreme reason why you cannot drink, don’t refuse it. Graciously accept and enjoy! She studied Graphic Design but her passion has always been art, which allows her to freely express her sensitivity. As a nature lover, she has been inspired by the singular native Australian animals. This exhibition tries to capture in the paper some of the characteristics and essence of each one of these animals. Thr...ough innovative watercolour techniques, the artist tries to give special grace to every painting. The water creates its own forms on paper, and Barbara plays controlling the colours and simultaneously she gives the water space so it can surprise us with its unexpected and beautiful outcomes.
