24.01.2022 In 2005 I opened Golden Monkey with good souls @adam.ong.melbourne and @mikeysremix We went on to win @australianbartender Best Bar in Australia, a career highlight. When we opened, I commissioned local Goldsmith legend @augusto.davidson to sculpt "the" golden monkey. When I sold my share of the business in 2009 I claimed the Monkey as a momento since I'd paid for it's crafting. 11 years later with my immanent move to Western Australia I decided it was time for the "Monkey..." to return home to watch over the bar. As fate would have it, local Toji @chiho567 was in the house and we were introduced to her Sydney jizake. A doburoku style nigori sake and a nama Junmai. Great to see craft sake being brewed Australia! This is an important milestone in the evolution of local sake market.... 08.01.2022 I had a wonderful time running a sake tasting session at @kazari_ziguzagu Kazari was a fantastic location to sip sake amongst a beautiful range of Japanese furniture, pottery, antiques and fabrics. Such a delight to share an afternoon with great people who are eager to expand their sake knowledge.... For this particular session I choose to highlight the "unconventional" side of sake with an interesting range of varients to illustrate the diversity sake has to offer. From left to right. I am 2019 Miss SAKE Sae Haruta. On March 16th, I participated in a Sake brewery tour and a tea ceremony experience with Miss SAKE from Australia, Hong Kong, Taiwan and Vietnam. Sasaki Shuzo brewery tour Sasaki Shuzo was founded in 1893. There are many Sake makers in Fushimi, outside the capital, however, this brewery is the only one brewery which is located inside the capital. This brewery used to be south area of the house of Hideyoshi Toyotomi called Jurakudai. One of the reasons he built his house here was great water. He used to hold a big tea ceremony called Kitano oochanoyu. Also, he made a space in his house for Sen no rikyu who is a famous tea master and enjoy tea with him. He loved tea. From these information, it can be understood that the area around here has long been a well-watered area. Sasaki Shuzo uses selected rice to make Sake with such high-quality water. They use the rice made in Toyama, not in Kyoto. Sake makers are usually located around rice-producing region, however, in Kyoto, you can hardly harvest much rice. Wine brewers own their own vineyards and grow wines, but for sake making, sake brewing and rice farmers are separated. So they look for good rice of the year from outside Kyoto. Mr. Sasaki Shuzo has handed down their spirit of sake making to the present day. I have spent valuable time to realize the tradition and history which are parts of the greatnesses of Japanese Sake culture. I will make great efforts to spread the feelings and spirits of breweries which differ one by one. Thank you very much for letting me join this wonderful opportunity. Tea ceremony experience by Randy Channell Soei Sensei Randy Channell Soei Sensei is a Canadian professor of Urasenke, and the reason for visiting Japan was to learn martial arts. While teaching English in Matsumoto City, Nagano, he attended a dojo such as Kendo or Kyudo and so on. Then, he met a tea teacher next to his house. It is a an encounter with the tea ceremony for him. Miss SAKEs from overseas and I had the experience of putting some tea on while being guided by Randy Channell Soei Sensei. It was the first time I had experience, and the manners were very difficult, and the taste of the green tea I made was very bitter. Randy Channell Soei Sensei said that the most attractive feature of tea ceremony is that it can interact with various people, one time in a while. The basic of tea is the hospitality, and it is contained that the heart that entertains the other parties and the mind that thinks of people in a cup of tea. After I made a cup of tea, Mr. Randy Channell Soei Sensei made a cup of tea for me. The tea that Randy Channell Soei Sensei, who is filled with such heartwarming thoughts, gave me no bitterness at all, and it had an exceptional deep taste. Miss SAKEs from overseas also had a very relaxing and meaningful time, touching Japanese culture and Japanese spirit. I would like to express my sincere appreciation for the opportunity to be able to realize the attractiveness again while sharing the wonderfulness of Japanese culture with foreigners through the activities of Miss SAKE. 01.01.2022 It's World Sake Day! To celebrate I am announcing the latest lineup of Andre's Sake. During the brewing season of 2015/2016 I worked at Shoutoku Shuzo in Kyoto. My sensei, Toji Otsuka San and I lovingly crafted a Kimoto that affectionately became known as "Andre's Kimoto".
