16.01.2022 Looking for healthy lunch ideas? Some days for me it's just a matter of opening the fridge and seeing what's there. Today was one of those days. Here goes.... Two poached eggs on wholegrain toast with home-made hummus, topped with Gaga's organic powerkraut kimchi (probiotic fermented vegetables) accompamied by olive oil sauteed sweet tasting grape tomatoes and spinach leaves and finished off with cracked pepper. 12.01.2022 This cooler weather calls for some Apple and Raspberry Crumble. This one is sugar & dairy free. You need: *5-6 Granny Smith apples , peeled, cored & sliced; * zest of 1/2 lemon ; *3/4 cup of frozen raspberries;... *3/4 cup of rolled oats; *3/4 cup of shredded coconut; *1/4 cup of chia seeds (optional); *1 tsp ground cinnamon; *1/4 cup of maple syrup; *1/4 cup of almond or coconut oil; *1/2 cup of crushed up walnuts, almonds. Method: *Preheat oven to 180c; *Place sliced apples, lemon zest and about 1/2 cup of water into a saucepan and gently cook the apples for 6-8 minutes. You want them just tender not mushy; *Drain apples and spread them out in a deep baking dish. Scatter raspberries over apples and set aside; *To make the crumble topping, combine oats, coconut, chia seeds, cinnamon, maple syrup, almond/coconut oil and walnuts/almonds. You can leave this chunky or pulse in a blender for a finer crumble. *Spread crumble mixture evenly over fruit mixture; *Place crumble in oven for approximately 30 minutes or until slightly brown on top. *Enjoy with yoghurt or coconut cream.
