11.01.2022 Get this on your bucket list... Next in our favourite hospitality venue fitouts, the BLACKSMITH. Nostalgic reflections of Aussie summers in the late ‘60s and ‘70s inspired Blacksmith Provedore in Lake Mulwala, a destination known as a resort town away from the ‘big smoke’, synonymous with days spent waterskiing and soaking up the sun. Designed by The Stella Collective, the restaurant encompasses both the past and future of this regional town, a modern exploration of bygone s...ummers. Owner and Mulwala local Liz Bayles sought to create a space for her regional community that stands strong and bright. Set only steps away from the shores of the lake, the serene modernist building evokes a countryside utopia, a whitewashed pavilion with arched windows and a timber porch. Timber beams lead visitors down a path to the entryway, with soft dry pressed brick, sand dune walls, textured tiles, warm walnut timber and white onyx stone revealing themselves upon arrival. On the interior and architectural facades, finishes in shades of bright white, buttery yellow and nude straddle both summer and winter-friendly palettes, the idea being that Blacksmith is a year-round destination. Centre stage is a restored vintage Brazilian cheese cabinet, now filled with wine. A freestanding fireplace further reinforces the restaurant’s trans-seasonal appeal. Outside, a round cabana doubles as a dance floor, surrounded by custom tiger-print, peach fringed umbrellas. Beyond being fun décor items, the white tigers are symbolic of strength, majestic courage, and vision. Tiles of various pattern and texture dominate the interior, cladding the bar, floor, surfaces, and full-height columns. Both safeguarding the regional town’s legacy while providing a fresh addition, Blacksmith was designed to enhance the mid-century buildings of its neighbouring environment. A three-hour drive from Melbourne and almost seven hours from Sydney, the destination is bound to live on as an idyllic city escape. 09.01.2022 Next up in our 4th instalment of our favourite hospo venues the Husk Farm. Australia’s first paddock to bottle Agricole rum distillery, which means it’s made from freshly crushed sugar cane juice, instead of molasses. Only about 3% of the world’s rum can be called Agricole and most come from a few small islands in the French Caribbean, so the fact that we have it on our doorstep is seriously special. The distillery can be found along the Tweed River, nestled in the adorable ...village of Tumbulgum. It sits in the heart of the deepest caldera in the Southern Hemisphere. Once a mighty Volcano, the land now provides an abundance of rich red volcanic soil from which the distillery grows its own sugar cane. Fortunately for us, the Messenger family, the heart and soul behind Husk, are now opening their home to the public. Visitors can experience the green wonderland for themselves, with the property boasting 60 stunning acres including the distillery, café, grazing cattle, sugarcane and 12 acres of uncleared remnant rainforest. After discovering their love of rum while on a holiday to the Caribbean, the Messengers have been experimenting with different cane varieties since 2012 and have gained a cult following for their delicious spirits. The star of the show here is their stellar rums. There’s the Tripple Oak Rum, a masterful blend of three barrels (ex-port, ex-bourbon and new American Oak), it’s made in an old 1000L copper pot still from first press cane juice. Our favourite of the bunch has to be their Spiced Bam Bam. It’s infused with roasted Australian wattleseed, native ginger, sun-dried orange and mandarin peel, golden berries, whole Tahitian vanilla beans and cinnamon quills to create a unique spice with a sprinkle of local sea salt. Hungry? Load up on delicious grazing boards piled high with locally farmed meats, cheeses, fruit and bread. With lush lawns (that have old school games on them), loads of comfy seating and one of the best backdrops in the world, we highly recommend you pay Husk Distillery a visit. Check out these pics "The direct translation of Via Porta is 'via the door'," says Sarah Cosentino. "We want our local community to feel like they're entering an extension of our family's kitchen and pantry."... While the Cosentinos are influenced by their Italian heritage, good produce and flavour drive the menu. Expect dishes like hot-smoked salmon open sandwiches on house-made rye, sausage and egg muffins with red pepper ketchup, and crispy fried half-chicken with grain salad and labna. There's also an assortment of panini, and house-made croissants, cannoli and doughnuts.
