23.01.2022 What is in my snack box today? Walnuts, baby carrot, cherry tomatoes, cubed cheese, zucchini and prunes. Lunch is a dark rye sandwich with beetroot hummus, zucchini and grated cheese and black pepper, delicious



16.01.2022 Try this for something different and delicious for all our vegetarian friends Twice cooked aubergine (eggplant) pasta. Simmer some sliced eggplant in vegetable stock inlet just cover the eggplant and leave lid off. Leave to simmer till cooked before it goes mushy must still hold its shape. Take off the heat and allow to cool.Precook spaghetti al dente rinse in cold water store in container add a couple of splashing of extra virgin olive oil. 15mins before dinner time heat 2 table spoons of extra virgin olive oil in hard based frying pan add eggplant one tablespoon of pesto and garlic paste to your own taste. Then add as much spaghetti as you need gently toss together and serve when completely heated through add pink salt granuals to taste. Serve topping with shaved Parmesan, enjoy I did

15.01.2022 Our Vegetarian Stir Fry! Delicious! Even if you are not a vegetarian you will get your green vege with this as a side dish. We have zucchini, broccoli flowers, eggplant, carrot, Brussel Sprouts, brown mushroom, red, yellow and green capsicum stir fry for a couple of minutes in 2 tablespoons of extra virgin olive oil, a teaspoon of garlic paste and 2 tablespoons of pesto. Add a lid and cook for a further 3 minutes, serve and top with crushed walnuts and shaved Parmesan cheese. Enjoy

04.01.2022 My Eggplant vegetable stack, needs a little refinement but it tastes good! Eggplant grilled and spread with pesto and with green, yellow, red capsicum, zucchini with a little tasty cheese grilled in between sitting on a carrot moose.
