24.01.2022 36 hrs after stopping the amine challenge, Jack woke up with a full blown migraine this morning It happens so quickly...he suddenly gets really clinging, goes white as a sheet and starts sweating, drops running down his face and body. I’ve never seen anything like it. Then he shakes all over and winces in pain and starts vomiting, which normally happens about every 15-20min throughout the entire course of his migraine (which is normally 12-16hrs long). He’s currently snuggled up on his Dad’s chest in a darkened room. What a brave little boy. Man my hearts breaks for him, enduring such pain. I’m channeling the pain I feel for him into prayer
22.01.2022 It’s a pear sorbet ice block kinda day sooo hot! We’re having a quiet week after the amine challenge ended in a big migraine on the weekend. Jack is recovering well and thankfully isn’t having any more headaches, but still has symptoms of amine intolerance. We’re giving him 1 or 2 Epsom salt and bi-carb baths each day and have gone back to a strict diet to help him recover. 12.01.2022 I found a new Failsafe snack while we are away camping! Sunrice mini bites rice cakes...just brown rice, sunflower oil and sea salt. The kids are stoked to eat something out of a packet! Perfect for snacking while camping Found these at Woolies.
06.01.2022 Amine challenge DAY 1. Last night we started with salmon in a bag with potatoes, leeks and garlic/herbs. Today we started cranking out the bananas for breaky, then we made chocolate banana muffins (gf/df) and I also got Mr 3 to eat 1/2 a block of dark Lindt chocolate throughout the day which he very happily put away. His mood today got aggressive and within 20min of having the chocolate this morning, he started complaining of headaches. But he was ok (headache wise) this arvo. Tonight we had major meltdowns at dinner time so I wondering if a migraine is on its way Roast pork belly for dinner with delicious {positively dripping with amines} crackling which we all enjoyed (and wondered how many more pork bellies we’ll get to enjoy in the future ). Guess we’ll have to wait and see!
04.01.2022 Lamb and leek gozleme on the BBQ while we are camping I mixed up the gf pizza dough dry ingredients before we came so all I had to do was add water, briefly knead and roll the dough (with a drink bottle ) and add cooked fillings. Super yummy Free from dairy, gluten, eggs, nuts and soy! Will post the recipe when I get home
03.01.2022 Buckwheat pancakes with fresh peeled pear and maple syrup for dinner tonight We’re back to basics after wrapping up our amine challenge for Mr 3 year old yesterday. He was 2.5 days into the amine challenge with constant headaches (from 20min after eating his first choc/banana muffin ), lethargy, irritability and aggression, waking in the night and dark circles under his eyes. He looks so sick poor thing. We rang the dietician for advice and she told us to stop straight awa...y. Apparently amines built up gradually but it can take ages to get back to baseline. We didn’t want to push him to a full 16hr migraine as he really wasn’t coping and already had major symptoms and we’re confident amines are a trigger. Too bad as he was loving the Lindt chocolate I’m realizing more and more that being able to eat whatever he wants is not worth a life full of pain. Living with a restricted diet but migraine/symptom free is actually a much more fulfilling life for him. I’m super thankful that we live in a time and place where we have access to food intolerance information and are able to be proactive and help our son manage his chronic illness. Super thankful for all the nutritious food he is able to eat and that he enjoys eating. Food intolerance is a part of our lives but doesn’t have to rule it. 03.01.2022 Carob mousse morning tea stop on our ride this morning These last 4 weeks since the amine challenge finished has been utterly exhausting. Mr 3 ‘s behavior has been off the charts....screaming, endless tantrums, extreme defiance and constant whinging. I’ve been feeling very stressed and anxious about it...but this morning I felt like I was starting to break. So I gathered up the kids and went for a walk. After my struggle with PND and anxiety I am getting better and noticin...g when I’m not coping and making the choice to break the cycle. By stepping out of the house and letting the kids ride their bikes (which they love) and getting outdoors and exercising myself, I broke the cycle. The car trip home was awful but at least we all got some headspace. Watching my beautiful son be affected so severely by food intolerance is so hard to watch and to live with. But at least I know where it’s coming from and I pray almost constantly for strength and patience with him, which I lack myself. I’m looking forward to starting the healing process once we are finished these challenges When we love our children, we do all that we can for them...even when it absolutely stinks x See more
03.01.2022 Recipe for chicken and cashew stir fry with brown rice below Failsafe and free from gluten, dairy, soy, eggs and nuts are optional. Simple, nourishing, tasty food Chicken and cashew stir-fry... Serves 4-6 500g chicken mince 2 x leeks, white part only diced 2 tbsp ghee, butter or rice bran oil 2 cloves garlic, crushed 1 1/4 cups chopped veggies (I used approx 1/2 cup shredded red cabbage, 1/2 cup green beans chopped, 1/4 cup shredded brussel sprouts) 2 tbsp chopped chives 1 tbsp parsley, finely chopped (optional) 1/2 cups raw cashews, chopped Salt to taste Method: 1. Add ghee or oil to a frying pan and add chopped leeks. Cook on medium heat, stirring frequently for 5 minutes or until soft. 2. Add chicken mince and continue stirring, breaking up any large pieces with the wooden spoon. 3. When the chicken is cooked add crushed garlic and stir until fragrant. Then add chopped vegetables, chives and parsley and cook for 2-4 minutes or until the vegetables are still crunchy but cooked. Add chopped cashews. 4. Season generously with salt (to taste). Serve with cooked brown rice or vermicelli noodles. See more
02.01.2022 Dinner tonight...home made fish and chips. Fresh whiting from Scott’s Head NSW dusted in besan flour (chickpea), salt and cooked in oil and ghee. Potatoes baked with rice bran oil and garlic flakes. Shredded red cabbage, brussel sprouts and beans cooked in garlic and ghee with a good pinch of salt. Thoroughly satisfying and woofed down by all
02.01.2022 Vanilla cupcakes with a variety of different toppings...carob kibble, fresh pear and carob icing (with crushed raw cashews). Free from gluten, dairy, soy and nuts. Contains egg. This vanilla cupcake recipe is so versatile...you can also pour the entire mixture into a cake tin and make into a delicious cake! Loved by failsafers and non-failsafers alike. Recipe below Vanilla butter bean cupcakes Makes 12 large cupcakes... 1 tin butter beans, drained and rinsed well 4 eggs 1/2 cup rice bran oil 3/4 cup syrup* 2 tsp vanilla extract (or as much you tolerate). 120g gluten free flour mix** 1/2 tsp guar gum 1/2 tsp salt 1/2 tsp bicarb soda 1 tsp baking powder Optional: chopped pear or carob kibble pieces. Preheat oven to 180c Method: 1. In a food processor combine drained butter beans and eggs. Blend until smooth. 2. Add oil, syrup and vanilla. Blend until combine. 3. In a separate mixing bowl combine gluten free flours (millet, rice and arrowroot), guar gum, salt, bicarb soda and baking powder. Whisk to combine. 4. Pour the liquid mixture into the flour mixture and whisk until just combined^ 5. Pour mixture into a greased muffin tray (or use patty pans) and sprinkle with desired toppings (optional). 6. Bake at 180c for 20 minutes until slightly brown and firm to touch. Notes: *syrup: I use 50/50 maple syrup and rice malt syrup. **gf flour mix: equal amounts of millet flour, white rice flour and arrowroot. A mix of gf flours works best. You could also use brown rice flour, teff flour, sorghum flour or potato flour. Make sure you weigh the flour as it has more accurate results. ^Don’t over blend as too much air in the mixture will cause the cupcakes to sink after you take them out of the oven.
01.01.2022 Our littlest turned 2 today! I made my faithful butter bean gluten free cake and iced it with a carob cream cheese icing. Did I mention that my kids passed the dairy challenge? I’ve been introducing dairy gradually into their diets but don’t normally cook with it for family meals as I can’t eat moo-products myself. It was something like one tub of cream cheese whipped with 4 melted carob bears (melted by the heat yesterday ), approx 1/4 cup carob powder (it was raw carob which is why the icing is lighter) , 1 tsp vanilla and pure icing sugar to taste (maybe 1/3 cup?). Super yum! And non-edible flowers on top...cause my little girl loves flowers
