Kate’s Bliss Balls Ingredients: 1 Weet-Bix 1 cup oats... 10 prunes 10 dried apricots cup trail mix 1tbsp cocoa 1 cup desiccated coconut 1/3 cup peanut butter cup honey Method: Blend Weet-Bix, oats, prunes, apricots, trial mix, cocoa and cup of coconut in a food processor until all ingredients are roughly chopped. Place peanut butter and honey in a microwave-safe dish and heat for 60 seconds. Stir to combine. Add to the food processor. Blend all ingredients until all combined. Roll into balls then roll in coconut. Store in air-tight container in the fridge. Eating dietary fibre leaves you feeling fuller for longer, provides better glycaemic control, feeds the microbiota in the large intestine as well as aids in laxation (going to the loo)! Most notably, oats are one of the few sources of a specific type of fibre known as Beta Glucan. This type of fibre has been shown to... assist with lowering cholesterol levels by trapping cholesterol while it is in the small intestine, thereby preventing its absorption into the blood.
