25.01.2022 Marshmallows were requested again so I happily obliged Theyre really easy to make and super yum (recipe is in my highlights, only 4 ingredients ). Served tonight with some @denada_co ice cream. A very indulgent dessert



24.01.2022 This is one of my favourite keto style meals because its super quick and tastes great - Zucchini noodles with Sugo and Steak. I slice up the steak and flash fry in a pan first in some good fat (eg. tallow, avocado oil) then remove the steak and keep warm while I quickly fry the zucchini noodles with crushed garlic and sugo. It only takes a few minutes for the zucchini noodles to soften, then I taste test and add some salt/pepper and a sprinkling of italian herbs before serving with the sliced steak on top. So simple, really yum and you dont need a lot of meat to make a full meal. This was around 100g of raw steak It tastes extra yum with grated parmesan on top too

23.01.2022 Chaffle topped with tomato always brightens up a breaky plate and tastes so good I love fresh chopped tomato mixed with a splash of extra virgin olive oil and some fresh chopped basil. I wasnt sure if basil would freeze well but put some in the freezer a few months ago as a test. Ive been using it for dishes like this since - it works beautifully!



22.01.2022 Simple start to the day - breaky plate with egg, zucchini, avo, sauerkraut and leftover cooked sausage. Im happy because Im finally remembering to consistently put a spoon of sauerkraut with most of my meals So good for gut health to have fermented foods each day, no idea why I used to always forget?

20.01.2022 Sunny Saturday pic with my breaky plate on our deck today (until our big dog photobombed ). We might be getting a little tired of lockdown life in Victoria but when the breaky plate looks pretty and the sun is shining, its not too hard to smile and be grateful for what we have. I look at this photo and can see the extra lockdown kilos Ive put on through eating a little more than my usual plus my hair hasnt been this long since I was in my 20s, never would have thought it could actually grow that long again!! But we are all safe and well so no complaining here Looking forward to enjoying the slower pace of the next few days and wIshing everyone a wonderful weekend

19.01.2022 Warning.....non-keto post but a great one for anyone home-schooling their kids at the moment. Or maybe Im the last person to find this out? Ive always focused on feeding my kids natural, additive free foods where I can. Now theyre teens, its more challenging but at home I still try my best. So instead of flavoured chips and snacks, popcorn is often made from scratch. I have my air popper and would get it out each time as I didnt like the microwave bags which have lots ...of questionable ingredients. A few days ago my son and I saw a cooking segment on TV (cant even remember who it was) and they just put popcorn kernels in a brown paper bag, folded the top down securely and cooked in the microwave for a few minutes. Perfect popcorn!! We couldnt believe it was that easy but had to try it and it worked perfectly Numerous bags of popcorn have been consumed during online schooling this week, wish Id learned this hack sooner!! All we do is put 1/4 cup popcorn kernels in a standard brown paper lunch bag, fold down top at least twice then into microwave on high for 2-3 minutes until the popping slows down. Then we melt 1-2 tblsp of butter and toss through with some sprinkles of himalayan pink salt, so easy and older kids can do it themselves See more

18.01.2022 How is this even possible??? Yesterdays avocado vs todays avocado. Think they both hit the record for the biggest pip and smallest pip Ive ever discovered. Both tasted amazing as always though, just love avocados and love that theyre full of the healthy fats we know are good for us

17.01.2022 Delicious slow cooker aroma filled the house today Just love Mingle Seasoning Hearty Stroganoff as its so easy. All you need is some protein, veges, tomato paste and stock. I just threw in the veges I had in the fridge which sadly didnt include the classic mushrooms which go so well in this dish. I slow cooked all day and added some sour cream just before serving. Then I was in such a hurry to eat it (after being taunted all day), I forgot to take a finished photo on the plate

17.01.2022 Another batch of mayo ready to go, this always makes me happy knowing I have lots in the fridge to use on my meals. For years I thought mayo was too hard to make as Id tried recipes that always failed or left me with a watery mess. The recipe I have now is so easy, takes less than 10 minutes from start to finish and works every single time (its in my highlights under "simply mains"). Plus you can change it up by adding different flavours of mustard or other ingredients that you like. You do need a high speed blender/food processor though (I love my Vitamix) so you can drizzle in the oil slowly at the end. Very thick, creamy and yum



15.01.2022 Pretty plate this morning It always makes me smile when the colours on the plate look good and it helps me to slow down and eat more mindfully. Eating mindfully is something Im continually working on for both weight loss and overall health. Just by turning off the TV, not reading or looking at my phone, I find I can focus on the beauty of all the food on the plate and enjoy every bite. I try and think of all the people who have helped to bring this food to my plate, from the farmers who planted the seeds to the truck drivers and the shopkeepers. So many people are involved in bringing food to our plates and Im very thankful to them all. Happy weekend everyone!!

14.01.2022 Low carb sausage roll Why hadnt I thought of this sooner? Fathead dough around a @cleaversorganicmeat grassfed hot dog. Very easy and so delicious

14.01.2022 Leftover cauliflower rice? Just add an egg (or two if you have lots of leftovers) and turn it into cauliflower hash browns. If you really want to get fancy you can add some grated cheese too. Mix it all together and fry up in a pan. Really yum on a breaky plate or great with a salad for brunch too

12.01.2022 Big breaky day....doesnt the avocado look pretty?? I still smile when Im eating broccoli and cauliflower on my breaky plate. A few years ago I never would have thought to have this, my brain had somehow compartmentalised veges into breaky/lunch/dinner categories. Mushrooms and spinach were "breaky" veges and things like broccoli and cauli were definitely "dinner" veges. Changing to a healthier eating style has meant my standard meals dont really exist anymore. Some days I have two meals, some days three. But my mantra "a vege with every meal" remains and I just love including as much healthy veg on any plate no matter what time of day it is. Just shows, we can change our habits at any age

11.01.2022 Eggplant parmigiana with haloumi and salad. This is much more cheese than I would usually have in one meal but I found an open haloumi packet nestled in a hidden part of the fridge and it needed to be used straight away. So easy to make this meal. I cut the eggplant into thick slices then rest and salt both sides for about an hour, rinse them off and pat dry. Then put the eggplant in a baking dish, spread with some tomato (paste, fresh or tinned all work well), sprinkle some italian herbs then top with mozzarella cheese. Into a moderate oven for about 30-45 mins or until the tops are golden brown. Such a yum meal, one of the kids favourites

10.01.2022 So enjoying this amazing haul from Keto Direct. Started the day with some delicious mushroom broth from the broth sisters, snacked on some Twins Pantry pesto almonds and then had a yum banana flavoured smoothie with the VitalZing banana drops. Really nice to have some new food in the house during lockdown

10.01.2022 Here is a video showing how easy these yum marshmallows are to make. The marshmallow is really good on its own but I love rolling in chocolate and coconut too. Please forgive my amateur video efforts, am slowly learning how this video editing stuff works. Might get my teenagers to do it for me next time

10.01.2022 Delicious low carb noodle stir fry using mainly leftovers. Used some leftover bolognese sauce, chopped some mushrooms, leftover cooked spinach and some konjac noodles. All tossed together until heated through in my big wok, super fast. Served with grated parmesan cheese on top, so much like a traditional pasta, really yum

10.01.2022 This was unexpectedly very yum - like a deconstructed Mexican burger I was feeling like a burger but didnt want to fuss around making buns plus I didnt have any salad leaves or tomato. The only vege I had was some purple cabbage so I fried that up in a pan with some garlic. Then I made burger patties by adding some @mingleseasoning mexican seasoning to a combo of pork and beef mince. Made a "secret sauce" by combining a few tablespoons of leftover salsa with my home-made mayo in the fridge (then an extra dollop of salsa on top). All served up on a chaffle with some avocado on the side. So good and sure hit the spot for a burger craving

06.01.2022 Salmon works so well with many flavours and I just love this tangy and sweet soy ginger sauce which is super easy to make (recipe below). This one was served with a fry up of cabbage, bok choy and brocolli, really yum. . SWEET GINGER SALMON Prep time: 10 minutes (plus 15 minutes to marinate) Servings: 4 serves... . cup soy sauce/tamari (or coconut aminos) 2 tlbsp rice wine vinegar 1 tblsp fresh ginger, grated 3 tsp fresh garlic, crushed 2 tsp sesame seeds 2 tsp fish sauce 500g boneless salmon fillet, skin on 1 tblsp sesame oil cup tomato sauce (low or no sugar) 2 tblsp lemon juice Shortening of preference for frying butter, coconut oil, extra virgin olive oil, ghee, lard . 1. Combine soy sauce, rice wine vinegar, ginger, garlic, sesame seeds and fish sauce in a small bowl. 2. Place fish fillets in small, flat container and pour marinade over top. Turn fish to other side to coat both sides with marinade. 3. Cover and return to fridge to marinate for 15 minutes. 4. Heat a fry-pan over medium high heat and add sesame oil to pan. 5. Add fish skin side down and let cook until crisp, roughly 4 minutes depending on thickness. 6. Pour marinade evenly over fish pieces then turn to cook other side, roughly another 4 minutes depending on thickness. 7. Remove fish from pan and add tomato sauce and lemon juice to pan. Simmer for a few minutes to thicken. 8. Pour glaze over fish to serve. Enjoy ! See more

05.01.2022 On Fathers Day you get your favourite breakfast This morning included our usual breaky plate (with leftover veges) and special low-carb pancakes with berries and coconut cream. Dont think we need to eat for the rest of the day now The kids fathers day gift included some favourite keto food from Keto Direct too, great to be able to order online during lockdown and they delivered super fast Happy Fathers Day to all the Dads out there

04.01.2022 Who else loves brussel sprouts? These beautiful baby brussels were just chopped in half and pan fried with a little salami, garlic and pine nuts. So yum and works well as a side dish to any meal

Heres my first one - choc coconut marshmallows. Hope you enjoy making these yummy treats

03.01.2022 Low carb chocolate meringues, really yum dessert that definitely didnt look so great when I made it (see pic, looks a bit like poop on the tray ). Served them up "deconstructed style" by breaking into pieces, putting a dollop of whipped cream on top, surrounding with chopped strawberries and drizzling with melted dark lindt chocolate. Super easy to make the meringues in the afternoon then throw it all together in a bowl for after dinner

02.01.2022 Still obsessed with these marshmallows They are so easy to make - only four ingredients and you can eat plain or dip in your coating of choice like Ive done here - melted dark choc/coconut. Really feels like youre eating a traditional "snowball". Think I might roll my next batch in toasted coconut for a change as theyre yum that way too. 01.01.2022 Love how the camera captures the beautiful bright colour of the sauerkraut Ive got another batch brewing at the moment and fingers crossed it will be a beautiful golden colour as I added freshly grated turmeric and fresh ginger to the new batch. This breaky plate was so quick, only had to cook the egg and bacon as I had leftover cauliflower rice in the fridge. Happy Friday, hope everyone has a wonderful day
