24.01.2022 COFFEE GRINDERS THEY ARE IMPORTANT! Selecting the correct grind size can prove a challenging and frustrating task but grinding fresh and to the correct size makes a huge difference. This is because as the coffee comes into contact with water, different flavour types come out at different times. First, you get acidic, sharp flavours, at the end you get increasing bitter flavours and hiding somewhere in the middle are the juicy sweet joyous flavours we all love. The correct ex...traction of coffee is determined by how long the water is in contact with the coffee and how much of the coffee is actually in contact with the water. This is determined by the size of the ground coffee particles. A correctly extracted cup of coffee, where the coffee has met the water for the right amount of time, will taste sweet and delicious. Under extracted coffee will taste salty or sour and over-extracted coffee will taste bitter or burnt. See more

The high altitude of cultivation allows for a slow, development of the coffee bean, which gives the cup profile of Nariño its unique characteristics. This coffee is fully washed,fermented 20-25 hours and dried slowly on parabolic dryers.

02.01.2022 New coffee release Halo Beriti Halo Beriti is a relatively new washing station in Gedeo, only being established in 2014 and provides purchasing and processing for around 750 local smallholder producers.This particular lot underwent a "special preparation" which involved a longer than normal fermentation (2-3 days as apposed to 1-2 days) it was then washed clean,soaked for 816 hours, then washed one more time before being carefully dried on raised beds for almost a fortnight.
