19.01.2022 : We couldnt believe our eyes when Spotswood resident Nadine Smith sent us photos of this glorious apple pie that she cooked up using ingredients purchased at the last #SlowFoodMelbFM. Best of all, she was kind enough to share her recipe with us! Youll be able to grab the ingredients at #SloFoWeFo this Saturday at John Howell Fruit, Rhys.pect.food and Lard Ass. 5 Granny Smith apples... 6 Pink Lady or any sweet red apples 100g caster sugar 55g light brown sugar Finely grated rind & juice of 1 lemon 1tsp ground cinnamon Pinch of salt flakes 50g demerara sugar 280g diced (2cm) unsalted butter, chilled in freezer for 15 minutes 350g white spelt flour Pinch salt flakes 80g caster sugar 1 egg yolk (reserve white) mixed with 40g chilled water In a food processor pulse together the flour and sugar. Add the butter and pulse until the size of baby peas. Add yolk and water mix and pulse once or twice until the mix holds when pressed. Turn dough out on a bench and bring together with the heel of your hand. Divide into two (one a bit larger than the other), flatten into a disc shape, wrap and refrigerate for 2 hours. Add caster and brown sugars to a wide saucepan, add lemon zest and juice, cinnamon and salt flakes. Peel, quarter and core apples adding to saucepan and coating in sugar mixture. Cover and cook on low for 10 minutes. Apples should be tender but retain their shape. Set aside to cool. Preheat oven to 200C. Grease a 22cm round pie dish and place in fridge. Stand pastry at room temperature for 10 minutes, then roll larger pastry into a 30cm disk (flour will help!). Shape into greased pie tin and return to the fridge. Fill pastry with cooled apple filling (reserving liquid) then cover with remaining pastry (26cm disk). Trim, press and crimp the pastry at the edge of the dish. Return pie to fridge to rest. Brush whisked egg white over pie then sprinkle with demerara sugar. Make a 2cm slit in the centre. Transfer to oven reducing heat to 185c and bake for 40-50 mins. Serve with thickened cream and the reserved apple liquid. Enjoy!

They continue to farm the property but payback to the indigenous community in recognition.

Grab your fresh fruit from John Howell, your dried fruit and nuts from Carboor Harvest, sugar, flour and spices from Rhys.pect.food, eggs from Belleview Farm, butter from Lard Ass and liqueur from Autonomy Distillers this Saturday. : 2 Gra...nny Smith apples, peeled, cored and grated 110g currants 70g golden raisins 70g raisins 70g slivered almonds 70g mixed peel 1 orange, zest and juice 90g brown sugar 80ml maple syrup 80ml orange liqueur Combine all ingredients in a medium saucepan and cook gently over medium heat for 15 mins until fruit has softened and the liquid reduced. Set aside to cool completely (can be made in advance). : 420g plain / white spelt flour 300g unsalted butter, chopped 90g brown sugar 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp ground ginger 2 eggs Place flour, butter, brown sugar and spices into a food processor and blend until the mixture resembles breadcrumbs. Add eggs and process until the pastry comes together. Turn out onto a generously floured bench, bring the dough together and divide in half. Seal in non-stick wrap and set in the fridge for at least 30mins to rest. : 1 egg, lightly beaten Demerara sugar, for sprinkling Icing sugar, for dusting Preheat oven to 180c. Grease 2 x 12 patty tins (40ml). Roll out one piece of dough on a well floured surface and use 7cm round cutter to cut 24 rounds and mould into prepared tins. Divide mixture between the cases (don’t overfill) and transfer to fridge to chill for 15 mins. Turn second batch of dough on well floured surface and cut 24 lids with the 7cm round cutter. Brush edges of the chilled pastry cases with egg and top with a lid. Brush lids with egg and sprinkle with demerara sugar. Gently pierce a hole in each lid with the tip of a paring knife to allow steam to escape. Bake 25-30 mins until golden. Allow to cool for 5 mins before turning out to cool completely. Farmers Markets have been declared an essential service under the current State of Disaster and Slow Food Melbourne has been doing everything possible to ramp up our already comprehensive Covid-19 Safety Policy to maximise public health safety at our markets. This includes the recent introduction of a market day contact tracing process and having more hands on deck to help ensure our policy is being followed. We are proud to report that our ...first Farmers Market held during a State of Disaster on the 8 August at West Footscray was a major success. We could not have asked for a better day. Shoppers were respectful, social distancing was maintained and people were able to purchase wonderful, fresh produce in a safe environment. Yes, some people were turned away for breaking the rules we gain no pleasure in doing this, but we remain 100% committed in keeping our farmers (many traveling from non-infected areas) and market community safe. 08.01.2022 : Lard Ass was founded by Monica, a dairy farmers daughter who grew up in Western Victoria surrounded by the creamy goodness of fresh milk and churned butter. Proud of her Italian heritage where food was grown and sourced locally, and growing up with 6 brothers and sisters helping mum, Bertilla and dad, Antonio manage the farm, Lard Ass grew out of a yearning for bringing back the great taste in butter. Monica tells us, "Our cultured but...ter is made on a small scale so that flavour, texture and ingredients are quality. Big on taste thanks to ripening cream from grass-fed cows, once you try cultured butter you wont go back to ordinary butter. Our butter is made from single batch churned cream after ripening with a starter long enough to bring out flavour, then hand kneaded and hand wrapped." 08.01.2022 : Luke and Vanessa Lipscombe took a circuitous route to becoming cheese-makers by first training in ecology and education until the foodie bug bit them. It was a job in an Italian cheese shop which changed Luke’s focus and led them both into their new lifestyle. Drawn to the scientific aspect of cheese making, Luke took a job working for an artisan cheese-maker in Beechworth where he learnt the art of French style cheese making... and became more interested in the microbiology of the ripening process. Next he and Vanessa jetted off overseas to spend time eating and learning more about cheese while travelling through France. Upon their return, they decided to turn their dream of owning their own cheese making business into a reality. Relocating to Myrtleford in beautiful North East Victoria they established their bespoke artisan business. It was the lush countryside and strong dairy focus of the local area that determined the move and so The Peaks Artisan Cheesemakers was born. 05.01.2022 Local foodie and #slowfoodmelbfm contributor, Nadine Smith has created this delicious salad that celebrates Spring and works as a hearty side alongside BBQ meats or grilled fish. The dressing is rich, tangy and terrific! Create this at home and grab your ingredients this Saturday from Thriving Foods Farm, John Howell Fruit, Rhys.pect.food, GsBees Honey - Down to Earth, Carboor Harvest and Villa Pileggi. ... : 1 cup organic white quinoa, soaked in 3 cups of water for 2- 24 hours 1 medium cos heart 50g rocket 2 bunches spring baby carrots, lightly scrubbed, tops trimmed to 2cm length Extra virgin olive oil Flaked salt and fresh ground black pepper : Zest and juice of half an orange 125ml extra virgin olive oil 1/2 cup crumbled feta 2 tsp honey 1/2 cup hazelnuts, roasted and skins removed, roughly chopped 1 crushed garlic clove : Strain the soaking quinoa and rinse with fresh water. Transfer to a medium saucepan and top with 1.5cups of water. Bring to the boil then reduce the heat to very low and place the lid. Simmer for 15minutes or until all the water has been absorbed then remove from heat and allow to rest for 10 minutes with lid on. Preheat oven to 180c. Place carrots on a roasting tray in a single layer, drizzle with olive oil and season with salt and pepper. Roast in the oven for 20 - 25 mins, shaking the tray once or twice to roast evenly. Turn the quinoa out onto a lined oven tray, spreading evenly with the back of a fork. Drizzle with olive oil, salt and pepper. Toast in the oven for 20 mins until the edges are golden. Make the dressing by combining all of the ingredients in a small saucepan. Hear gently until warm and flavours are mixed. Assemble the salad by arranging the cos and half the rocket on the base of a salad bowl, top with roast carrots, quinoa, remaining rocket and finish with lashings of dressing. Enjoy! 02.01.2022 : No Christmas celebration is complete without some Rocky Road and here’s a tasty version created by #SlowFoodMelbFM contributor Nadine Smith. These make the perfect gift simply wrap into individual bars and give to teachers, friends or neighbours.... You can grab most of the ingredients from our minimal waste mobile pantry, Rhys.pect.food. Just bring clean, empty containers along and see if you can create a Rocky Road that look’s this good! : 500 gm dark chocolate (54% cocoa solids) coarsely chopped 200 gm vanilla marshmallows, snipped in half with kitchen scissors 50 gm slivered almonds, lightly roasted 50 gm chocolate coated freeze-dried strawberries 150g rose turkish delight, each piece cut into 4 or similar size to marshmallows. : Grease and line a 20 x 20cm cake tin with baking paper, allowing the sides to overhang (for easy removal). Melt chocolate in a heatproof bowl gently in the microwave, careful not to overheat. Combine marshmallows, almonds, strawberries and turkish delight in a bowl, pour over melted chocolate and stir well to coat. Transfer mixture to lined tin, spreading out evenly. Set aside until firm (approximately 2 hours). Once set, turn out onto a clean surface and, using a hot knife, cut into bars. Rocky Road can be stored in an airtight container for up to 2 weeks. Enjoy every delicious bite!
