17.01.2022 Myall wood... more like Milo wood? Got to try a new wood type from Russ a Natural Smoke BBQ Woods, and I have to say I am impressed. Myall is a native acacia, and is super dense... haven't actually come across anything this heavy per chunk before. As much as I thought it might just smoulder and burn dirty due to the density, it actually combusts really well, Russ mentioned its super well dried so this probably helps alot.... The smell was sweet, sort of like an Aussie Oak, but there is an extra smoothness there, and even with some heavier looking smoke being produced it wasn't overpowering the meat flavor. Good burn time too, each chunk on the snake gave me about an hour of solid smoke, which is really impressive as I usually factor about 30-40 minutes per chunk on a snake method. Looking forward to giving this one another go! 14.01.2022 We get a lot of questions about digital thermometers. The thermometer on your BBQ is probably in the wrong place or out compared to the temp at your cooking surface. Also it doesn't measure the temp of your meat as its cooking, so in general, but for low and slow especially, a digital temp probe is a must have. Inkbird Australia have an amazing sale on at the moment on the IBBQ-4T (pictured in use in this photo) which is our favourite digital thermometer to use, and we have been through a few! 08.01.2022 Thursday night burger... sandwich night! Nashville hot chicken sandwich! Has been a while coming, this is legit indulgence. Followed the method from Dane over at Smoke & Steel but kind of chickened out (geddit) from going bananas with the heat in the fry oil so just used Sweet Dreams rub instead.... Traditional white bread and pickles... lettuce, mayo and cheese to complete. If you like this kind of stuff, you will love the Australasian Fried Chicken Alliance ;)

06.01.2022 One pan bacon and egg sandwich this morning. Not my original idea, just first time doing it myself. Method: fry your bacon in the pan on low heat, then remove. Add in 2 whisked eggs, then place the bread on top, butter side up. Once eggs are firm, flip, then add seasoning, cheese and bacon. Fold the sandwich up, grill bread top and bottom. ... There are many versions, lots on TikTok and YouTube, this was my quick little craxk at it. Its a clever little cook, needs more bacon next time, abd probably more cheese! We used our Risk It and Bulletproof bacon for maximum flavor.

02.01.2022 Love this gorgeous weather for quick and easy weeknight grilling! Lamb chops and Mediterranean salad tonight. The lamb was amazing but the little fried haloumi squares were next level.... - Lamb loin chops from My Local Butcher - A little Olive wood chunk from Natural Smoke BBQ Woods for a tiny kiss of smoke flavor on the lamb - Olive Pip Co. Briquettes in he trusty Weber GA - Something a little fancy on its way from us ;)



01.01.2022 Just a little quick wingy treat tonight :) Chicken wings brined in pick juice for a few hours, seasoned with Sweet Dreams and then given the hot and fast treatment in the kettle. 25 minutes flat out then given a brush with some 'Ain't No Thang' sauce from Good Sauce Co, ended up with some sticky, tasty, wingy goodness! Chunk of Natural Smoke BBQ Woods smoke Nectarine on top of about a half a chimney if white hot Olive Pip Co. Briquettes easily did the job.

01.01.2022 Smoked up some home cured Bulletproof bacon a few days ago, too hot to cook anything this afternoon so spent some time slicing it and sealing it up. First time I ever smoked bacon was with Apple wood; hadn't used it for a while so took a trip down memory lane with some of this amazing quality gear from Natural Smoke BBQ Woods. In the WSM with Olive Pip Co. briquettes, has resulted in a really beautiful smokiness that has depth but not overpowering. 3kgs of amazing pork belly resulted in about 108 slices of delicious bacon. Always let your butcher know you are making bacon if you ask them for pork belly, that way they know to get a nice section like this, with a lot of meat and as thick as possible. This epic slab was from My Local Butcher.
