Place... over medium-high heat and when hot, crack your eggs in. Once set on the bottom and not spreading around the pan, add a tablespoon or so of water, cover with a lid and they will cook evenly as the lid reflects back heat from the top. 21.01.2022 This Olive Bread was a popular recipe last time, so here it is again. Ingredients: 3 cups Flour 1 tsp salt 1 tsp Instant Yeast... 1 tsp Thyme Zest of 1 Lemon* 60g Sliced Black Olives 80g Stuffed Green Olives 100g Pitted Kalamata Olives 1 Tbsp EVOO 1 cups Water Method: Drain olives, slice stuffed olives and Kalamata into halves. Mix dry ingredients and lemon zest. Add olives and mix. Add water, olive oil and mix. Scape down sides of bowl to form a ball, cover bowl with cling film and leave overnight for at least 12 hours. Tip dough onto a floured surface and shape into a ball. Divide in half if wanting to make loaves and shape accordingly. Place dough onto cooking paper, cover with a cloth and leave for 1-2 hours. Heat oven to 220C and put in cooking dish with lid for 30 minutes. Put dough into dish with lid and cook for 30 minutes. Remove lid and cook for a futher 15 minutes. If making two loaves, cook each for 25 minutes with lid on and then 10 minutes with lid off. * Alternatively you could use a flavoured olive oil such as lemon or even herb

17.01.2022 ELDERFLOWER-LEMON OLIVE OIL CAKE 1 cup all purpose flour 2 teaspoons of baking powder teaspoon of salt 1/2 cup of granulated sugar... 1 egg white 3 eggs cup of low fat milk 3/4 cup of Lemon Fused Olive Oil 2 tablespoons of Elderflower Balsamic Vinegar 1 tablespoon lemon zest cup of powdered sugar for dusting Preheat oven to 350 degrees F. On medium speed, mix sugar and eggs until fluffy, gradually add Lemon Olive Oil, lemon zest, Elderberry Balsamic Vinegar, and milk. Sift flour in a separate container, add salt and baking powder and set aside. Fold wet and dry ingredients and combine. Bake for 35 40 minutes until golden brown. Once cooled dust with powdered sugar and serve.



16.01.2022 KEY LIME MISO NOODLE BOWL Key Lime Balsamic Miso Dressing Ingredients 1 tablespoon white or yellow miso... 2 tablespoons Key Lime White Balsamic 1 tablespoon Honey Ginger White Balsamic 3 tablespoons Garlic Olive Oil 1 tablespoon UP EVOO of choice 1 teaspoon Roasted Sesame Oil Directions Whisk all the ingredients in a medium sized bowl until, smooth, thickened and slightly emulsified or place in blender and process until smooth. BOWL INSTRUCTIONS Slow poached chicken sliced chicken, season with salt and boil Glass noodles Edamame Carrots - grated Cucumber - diced Scallions - chopped Red Cabbage sliced Chopped Roasted Peanuts Garnish with cilantro Boil water in a medium pot, remove from heat and add glass noodles, soak until tender (3-5min) then drain and rinse in cold water. Serve noodles in a bowl and top with chicken, edamame, carrots, cucumbers, scallions, red cabbage and Key Lime Miso Sauce, top with roasted peanuts and cilantro.

Olives & olive oil are a big part of my food life, I simply can’t imagine a day going by without me munching on a dozen olives or drizzling a glugg of olive oil. The acidity of pomegranate molasses mixed with mint & parsley then infused into olives makes a great combo that is completed by the use of walnuts which bring creaminess and a subtle balance of flavour to the recipe. Adding pistachio makes this chunky dip absolutely delicious! Green olives are perfect for this recipe, yet the tangy flavour of @riovistaolives green kalamata olives & the delightful tropical fruity flavour of Correggiola extra virgin olive oil make this recipe something I can’t deny but to say is the ultimate ingredient combo! This incredible dish is popular in northern Iran and south-east Turkey. 2 c green kalamata olives @riovistaolives, pitted, coarsely chopped 1/2 c extra-virgin olive oil, Correggiola type by @riovistaolives 3/4 c walnuts 1/4 c pistachio, coarsely chopped 1/4 c fresh parsley, chopped 1/2 c fresh mint, chopped Pinch of chilli flakes, preferably Aleppo 1/3 c pomegranate molasses 1 tbs fresh lemon juice 1 long red chilli, chopped freshly ground black pepper flaky sea salt to taste (if needed, however by using green kalamata olives I didn’t add any salt) Preheat oven to 180C. Roast walnuts on a baking tray for 5mins. Tip roasted walnuts into a tea towel rub well to remove skin as much as possible. Remove from tea towel & chop coarsely. In a bowl, combine all ingredients toss gently to incorporate. Season lightly with black pepper & chilli flakes. Transfer to a jar; seal & refrigerate for 1 to 2 days. It will mature & develop peak flavour. Bring to room temperature before serving. Serve with Labneh (or thick Greek yoghurt, I used @jalna_yoghurt) topped with feta cheese. Works well also as a colourful accompaniment on a cheese platter. Enjoy

01.01.2022 FARMERS FORCED TO SUFFER WATER TORTURE I have long warned that allowing our water to be traded by wealthy speculators with no attachment to the land would end i...n disaster. Now we are learning that much of what was feared has come to pass. We are seeing nightmare scenarios such as huge quantities of water being locked away in dams as speculators horde it for profit, even while drought-stricken farmers are forced off the land. Couple that with a long term failure of governments to invest in much-needed water infrastructure and it's no wonder you hear farming saying they are being subjected to water torture. This shameless water profiteering we see from wealthy speculators is having a devastating impact on our farming and manufacturing sectors. Until we overturn the government policy that has created this mess then the water torture will continue.
