25.01.2022 Last week I left the Shire for the last time to concentrate on nutrition coaching from the Inner West. I said goodbye to a lot of very dear personal training clients but I also said goodbye to a group of ladies who have inspired me every day for the last 5 years I have loved every minute of my Super Mums classes. You have told me many times just how much you've enjoyed the sessions and the friendships you've made along the way but the truth is, I got as much (if not ...more) out of it as you did! I have admired your determination to put yourself and your health first for those short few hours a week, knowing that by doing this, you're taking better care of your families as well as yourselves. I have been inspired by the way you get yourself to class, even when you've hardly slept (which is quite often) knowing that as long as you got yourself there, the rest would take care of itself. I've been amazed at how quickly the kids imitate what we do and I'm proud of the part we've all played in teaching them that exercise is an every day part of life. 20.01.2022 Enjoying this glorious weather we've been having with a bit of much needed rest and relaxation camping down at Jervis Bay. So many beautiful beaches Would you believe it's my first time roasting marshmallows on a campfire!?! I'm sold, one of the best things ever, like if you agree!

17.01.2022 Peanut fudge! Need I say more!? Whilst it's preferable to eat nutrient dense food most of the time, there should always be room for treats. Especially if made from real, unprocessed food and natural sweeteners Just 5 ingredients and takes less than 25 minutes to make. Naturally vegan, gluten free, grain and dairy free and will satisfy the biggest of sweet tooths!... Perfect anytime but would be an easy gift to make to take to friend and family over the Christmas season. And who doesn't like a homemade gift!? 17.01.2022 Chocolate Mousse with Raspberries and Coconut (recipe below) This is one of the easiest desserts you'll ever make. It literally takes 10 minutes and is perfect for a family treat or if you have guests for dinner. I have friends that request this when they come over! It's rich and chocolatey and yet there are no nasties in it! Serves 4 but I've successfully halved ingredients for 2.... 2 small to medium avocados 1/2 cup maple syrup 3/4 cup raw cacao powder 1 teaspoon vanilla paste Large pinch of salt 1 small punnet raspberries Dessicated coconut Blend first 5 ingredients thoroughly Spoon into glasses, cover and refrigerate for at least 30 mins Just before serving, add raspberries and sprinkle generously with coconut If you can only find large avocados, add slightly more of each mousse ingredient Don't be worried if it doesn't seem like there's much mousse in each glass. It's rich and once you add the raspberries it's more than enough The mousse tastes much better once chilled so don't skip this step! Enjoy! 09.01.2022 What's the best way to make your food taste good without adding fat and sugar?!?! ..........herbs and spices off course I have wanted to grow my own herbs for ages. I don't have a good history with keeping plants alive but I'm really over buying herbs in the supermarket only to use a third of the bunch with the rest ending up in the bin! ... So......I'm starting small. These are my new purchases of parsley and mint. Let's see how I go over the next few weeks. If I can keep them alive, I'll treat myself to some basil They are both already looking a bit bare because I used a fair bit for a delicious pot of garlic and chilli prawns last night. Yum!! Please help me keep these guys alive by sharing your herb growing tips in the comments. Thanks! See more

05.01.2022 Why I'm most productive before I've even gotten dressed! It's good to look to the future but often the only way we can ensure we are taking steps to our goals is by focusing on what you can do today. I do my best thinking in the shower and while I brush my teeth, so I use this time to think about what task I can do today to further my journey towards a personal goal.... There are always lots of other competing thoughts that we consider more important but do this for you and use that particular time to focus on furthering a goal that is personal to you. When do you do your best thinking? And what can you do today that will help you achieve something important to you? 03.01.2022 Meet the lovely Nicole from Nicole Anderson Photography You might have noticed that I've shared a few more clean and professional shots of me over the last few weeks. Well, Nicole and Mandy from Ivory State Hair and Makeup are the wonderful and talented ladies responsible for making me look good! When I first started writing articles and blogs about health, nutrition and fitness, I didn't want to be in any of the photos. In fact I don't think there is a photo of me attac...hed to any of my articles anywhere!! And don't get me started on social media....discomfort level off the charts!! But....I'm in the industry where sharing photos of my recipes and my wonderful clients just isn't enough. I've been told many times that people want to see the face behind the name so I’ve been making an effort to show you more of myself and what I'm about I’m not naturally photogenic so I decided to put my trust in Nicole and Mandy to make sure my pictures made people want to read the posts, not scare them away! So, because my passion and purpose demands it, you have been seeing a lot more posts with me in them!
