19.01.2022 Fresh tofu. It’s our version of just-baked bread .. hot, aromatic and moreish. Gimme gimme (pls). Like dough-wranglers, a lot of making is done as friends are waking up. This morning’s breakfast is layered logs of warm tofu, house wasabi mayo and dried wakame from nw Tas. It’s pretty. It’s texture, flavour and macros in a serve. 16.01.2022 It’s the day before DAD DAY which means tofu day (any day). Your Dad would love this, right?! ‘Eggy’ tofu cube salad - Recipe belowwith 'any greens' sunflower seed pesto, hummus and home grown mung bean sprouts and pea shoots. Huski Greens at #farmgatemarket has handfuls of micro greens if you’re not a mung fan. . Last week I made #pesto with humble #sunflower seeds (toasted) and literally any greens.... . So good and simple - a real cupboard staple recipe, well, as long as you have some greens! . I add 1/2 tsp white #miso to the pesto for a 'cheesy' touch but you can use any miso, nutritional yeast, or leave it out. Forgot to add fresh garlic to the recipe slide btw... . ‘Eggy’ tofu cubes . 250g tofu (medium or firm) I used @theartyvegan 2 tbsp all purpose flour (or, gluten free or rice flour) 1 tsp black indian salt kala namak (or tsp sea salt) tsp turmeric powder Black pepper to taste A few tablespoons oil to fry, I used odourless coconut oil . Cube the tofu in 2-3cm cubes (no need to press it), mix the flour, salt, turmeric, and pepper in a bowl and toss /gently press the cubes to make the moisture from the tofu bind enough flour to make a thin 'batter' around each cube. Fry on low heat, turning the cubes so all sides get browned. Add more oil if it looks dry. Drain on a piece of paper or kitchen paper towel. . To assemble the salad: . Spread a layer of hummus, top it with a generous layer of pesto, add salad leaves of choice, blanched mung bean sprouts and finally the cubes and any other salad veggies you have. Finish with a balsamic drizzle if you have - I used @odysea_ltd or a few drops of lemon or any vinegar. . Plate @gaya.ceramic . 11.01.2022 This sunshine-fueled recipe shared thanks to Sara at @shisodelicious is spring on a plate. Or three! A super simple, light yet satisfying meal FULL of flavour (recipe below!) Smashed garlicky cucumber and dressed #soyoyoy tofu with a bowl of rice (white or brown sushi rice) . Smashed cucumber... . 2-3 servings . 1 large (English) cucumber or 2 small, peeled if you wish A sprinkle of sea salt 1 large clove garlic, minced 1 tbsp Korean soy sauce 1 tsp maesil-cheong or a pinch of sugar 2 tbsp vinegar, rice, white wine or apple cider 1 tbsp Korean toasted sesame oil A sprinkle of toasted sesame seeds . Lay your knife blade on top of the whole, unsliced cucumber and hit hard on the blade with your fist to smash the cucumber. Halve it lengthwise then slice into bite-sized chunks. Sprinkle with a good pinch of salt and set aside in a strainer. Make the dressing by combining the rest of the ingredients in a big bowl. After 10 minutes, rinse the salt off the cucumber, give it a little squeeze to drain more liquid then pat dry. Add the cucumber to the dressing in the bowl and combine. . Dressed chilled tofu . 2-3 servings . 1 block #soyoyoy tofu (firmer tofu won’t work as well in this recipe) A good pinch of sea salt Small bunch of garlic chives or spring onions, chopped Optional: A few red or green shiso leaves*, chopped A goood drizzle of Korean toasted sesame oil A sprinkle of toasted sesame seeds *You can use grated or finely chopped fresh ginger instead . Place the tofu on a small plate, score it lightly with a knife then top with the rest of the ingredinets. You can use soy sauce instead of salt if you like. .
