20.01.2022 Lets talk about TDS. You may have heard it mentioned in your fave specialty coffee shop or by baristas in conversation. What is it? Put simply, it is the measurement used by baristas to better understand the extraction quality of their brew method and ratios. Why is it important? It helps us to track and keep record of how our methods (temperature, water, pressure, grind, yield and run time) are affecting different coffees. Why is it not important? While its a great guid...e for helping us understand, track and perfect our methods, the refractometer used to measure the TDS is missing the most important testing outcomes. #taste #flavour Case in point. This stunning semi washed Bolivian, expertly roasted by Eva @lightcoffeeco falls outside the guidelines of the perfect extraction but as a human being with tastebuds we can identify that a higher TDS reading on this particular coffee with our particular brew methods yields a significantly superior taste.
