24.01.2022 Did someone say lamingtoncake for Australia Day? I had a ball at IKEA Richmond today doing what I do best - baking! Kids are my biggest fans! I'm passionate about encouraging kids to bake as my love of baking began at the tender age of 5 when I started to teach myself how to bake. I'm back in the IKEA Richmond demo kitchens this Sat 28th and Sun 29th Jan for baking demonstrations between 12pm - 3pm each day, drop by and say "hello" if you're lucky you'll get to sample some of my creations!

18.01.2022 Thank you Ikea Richmond it's been a wonderful start to the year for me creating desserts for hungry IKEA customers throughout the January holidays. I was lucky enough to be working from one of their top of the range demo kitchens, here's a rare photo of me with one of my creations; my lamington cakelettes. I know that many customers walked away happy with cake in their bellies and my recipe in their hands, I can't wait to see customers recreate my recipe with their own per...sonalised spin! There's 250 grams of puréed beets in this cake, not that you can tell. So why not try making a red velvet chocolate beetroot cake with lemon cream cheese frosting and coconut chips, it's kinda healthy...

05.01.2022 After tasting this at a little Italian deli around the corner from my office the other day I was inspired to create my version of a crostata made with my homemade spiced plum and blackberry jam and a beautiful home made semi sweet pastry, delicately laced with lemon, that's both biscuit like and tender cake like at the same time. A simple tart that packs a punch!
