02.01.2022 With all the focus on ham this Christmas, don't forget about the rest of our delicious pork! Pork Loin Roasts are perfect for the Christmas table and are the best cuts of pork for crackling. For the best crackle, we recommend scoring (we can do this for you) and salting heavily (HEAVILY), removing from packaging and letting the pork air dry on the bottom rack of your fridge for 24 hours. When it comes out, pour some boiling water over the skin to open up the pores of the pork..., pat dry with a paper towel and salt heavily again. When it's time to cook, get your oven to its maximum temperature and cook for approximately 20 minutes - then lower the temp to 180 until cooked through (30-35 minutes per kg).
