25.01.2022 Sourdough cinnamon scrolls. . The recipe is by @kingarthurflour and can be found on their website. I did change a few things (as usual ). I used rapadura sugar instead of brown sugar in the filling. And as well as the cinnamon in the filling I also added orange zest and @nomadspices ras el hanout spice mix. The fragrance from the buns as they were baking was delicious. 25.01.2022 A coconut and raspberry cake. This cake served 2 purposes... It was a baby gender reveal cake. The buttercream filling was coloured to reveal the baby’s gender. The cake was also the birthday cake for the lovely mum to be. #bakedbyfiona #genderrevealcake

My 3rd sourdough loaf, this time coated with sesame seeds. It was crispy, crunchy on the outside and soft with even sized and distributed air holes on the inside.... . 24.01.2022 The weekly batch of sourdough pasta made into farfalle shapes this time. Also fondly called bow ties. . I’m not sure I want to return to eating commercial pasta. Which means scheduling a pasta making session into my week. I think I can do that. I’m also going to need a few extra pieces of equipment, like a zigzag cutter wheel for the farfalle edges (I really though I owned a zigzag pastry wheel, but seems I don’t). And I’d like one of those wood blocks that look like butter paddles, does anyone know what that’s called? . #sourdough #sourdoughpasta #bakedbyfiona

24.01.2022 It’s been a long time since I baked a quiche. . The pastry was made with 50% purple wheat flour and 50% white flour, and it had a lovely full flavour. . The filling had leeks and celery from my garden sautéed with bacon. Fresh sage and grated kefalograviera cheese were also in the filling.... . A tip for the custard... make it ahead of time, add plenty of nutmeg and pepper and let it infuse in the fridge for at least a few hours. Then strain the custard mixture when you’re ready to use it. . Dinner sorted . #bakedbyfiona #quiche See more



24.01.2022 Swirly baked vanilla donuts. Glazed with ganache and topped with Botanical Gold Flower Garnishes and sprinkles. . Before Christmas I bought some pecan nut products from a farm called @barefootfarmbyron. I discovered them through the @buyfromthebush campaign. I purchased a big bag of fresh pecan (which were/are delicious) and some spiced pecan dukkh (which was sprinkled over my cinnamon roasted pumpkin for Christmas). . While I was browsing their website I found a couple of pr...oducts called Botanical Gold. These beautiful jars are full of dried edible flower petals and flecks of edible gold. They are so pretty, and a lovely surprise find, both colours made their way into my shopping cart. . #bakedbyfiona #buyfromthebush #bakeddonuts . 24.01.2022 Thanks Costa, a gardening hero! . Long story short, I’ve been volunteering for the @sydneyediblegardentrail over the past 6 months, mainly working on their website and designing graphics. Mid last week, the trail had to be postponed and (very quickly) it was turned into a virtual garden trail. Costa Georgiadis Official very kindly and generously gave his weekend to visiting gardens, making live videos and interviewing garden hosts for ticket holders to watch online. . I was a...sked to make a cake for Costa on behalf of my fellow committee members. It was my pleasure, and I knew it had to have edibles for the decorations. Perennial basil and thyme were wrapped around the 2 tier bundt cake. . Thank you Costa! . Cakes: 2 different sized brilliance bundt cakes, pans by @nordicwareusa. 21.01.2022 The festival of tomatoes is coming to an end in our house. So far this summer I have harvested about 15kg of tomatoes from my little @drivewayveggiepatch. There’s been many tomato meals and salads enjoyed, jars of Greek tomato jam have been made and I even made my first batch of passata. . One thing I’ve been wanting to make is a tomato galette or as it’s known in Italian, crostini. I sought the advise of my foodie friend @_angelapalermo_ about the pastry I needed to make which was a lovely pastry with yoghurt. My first attempt at a galette is ready for dinner tonight. Using a variety of my tomatoes, fresh thyme and oregano from my garden, under the tomatoes is a layer of grated feta cheese and a little Parmesan. 20.01.2022 Another test batch of Monte Carlos. I took on board family feedback and made the biscuits a little flatter. While the first batch were more rounded and looked good... they were not easy to eat! So I flattened the bikkies as I baked them. Filled with my vanilla Swiss meringue buttercream and the lovely tangy Aussie raspberry jam by @beerenbergfarm. . I certainly never thought I’d be making sourdough pasta on a weekly basis. . I felt adventurous today, and made tortellini with my sheets of sourdough pasta. 15.01.2022 Another cookie for the Christmas bikkie tins. The chocolate crinkle cookie, where have you been all my life. I don’t know why I haven’t baked these before. After MUCH research I chose John’s recipe from @preppykitchen. A couple of reasons... they looked delicious on his website (his food photography is great) and he gave his ingredient list in metric measures. By this I mean the ingredients were listed in both grams and the cup/spoon measurements. This might seem a minor thi...ng, but in baking, precision of ingredients is important and for this reason I only use recipes that give me the metric measurements. There are many great baking blogs/recipes in the US that only give cup measures BUT you have to be conscious when measuring these cup/spoon measures, that here in Australia our standard cup sizes are different to that in the US. You can sit and convert yourself (there are websites that help you)... but if a reputable blogger does this for me, they usually get the nod from me! . And back to John’s chocolate crinkle cookies... they are a little soft in the middle and crinkley on the outside and have a delicious chocolatey flavour. I’ll be making these again. 15.01.2022 Tahini and almond cookies. So delicious and a bit more healthy than the usual cookies I bake. Based on the recipe by Sneh of @cookrepublic (recipe is on Sneh’s website). 15.01.2022 I made a cake last week! . When a family friend asked if I’d bake her a cake, I jumped at the chance. The cake was for her son who had just got engaged. She wanted a heart shaped cake, so a heart shaped cake she got. . The vanilla cake was hand cut into heart shapes, soaked with elderflower and vanilla syrup and filled with my vanilla mascarpone cream, fresh strawberries and freeze dried raspberries. The cake was topped with more mascarpone cream, fresh strawberries, rasp...berries, dianthus flowers, perennial basil flowers and leaves. . 14.01.2022 Making more of my chocolate Milo sandwich cookies in a couple of days. Each cookie has 2 sugar crusted chocolate cookies sandwiched together with Milo Swiss meringue buttercream. The cookies have a thin crisp shell but are deliciously soft and chocolatey on the inside.

14.01.2022 A 6 vanilla tower cake. Yellow, green and gold were the theme colours, so I used subtle buttercream colouring on the cake and then popped the yellow colour with the florals. 08.01.2022 They don’t always come out of the pan cleanly. Last night I had a complete disaster baking a chocolate bundt cake... just as well is was late in the night so there’s no photographic evidence of the mess. All that remains of the cake is a container full of chocolate cake crumbs! I did realize later I’d forgotten to flour the pan, I’d only greased it with the ghee. . So to redeem myself I returned to the same bundt pan that caused me so much grief and baked another cake t...oday. I did grease and flour it this time. It came out beautifully and smells delicious (it’s a lime and coconut cake). It just needs a little glazing and it’ll be ready... . This pan is the @nordicwareusa small Brilliance bundt pan. 03.01.2022 2 out of 2!! My second loaf. . I’ll get the critical point out of the way first. This one didn’t rise as much as my first loaf. I left the dough a little too long on it’s final proof before shaping. I could feel it when handling the dough. But this was not drastic in the final result. . The crumb was closer (result on the proving above), the bubbles/crumb were smaller and more evening distributed through the bread. I found this one nicer eating than my first with a slightly s...our flavour. . I will keep going! I’m going to try to bake a loaf every three days (this is how long a loaf lasts in our house of 2). . I’d like to acknowledge a couple of people, and their accounts, who have been sharing their knowledge: @joseybakerbread (the fabulous baker at @themillsf) is sharing an enormous amount of his baking knowledge on his account. There’s lots of things to make using this discard, cause, let’s face it, it’s just flour and water with some fermentation. . 02.01.2022 We had toasted sandwiches for dinner tonight. . This week’s sourdough was baked through the afternoon and, really, we couldn’t wait til tomorrow’s breakfast for sourdough toast. . This is loaf no. 4. It was slightly mis-shaped (thanks to my late night effort of the final shape late last night). Sesame seeds definitely a favourite in our house. The crumb was more dense looking (not so many big air bubbles) BUT it was actually quite light when eating. Good flavour. Still happy ...with my progress.. . 02.01.2022 The 90th birthday cake I made for my dad last week. Inside were layers of chocolate cake with a Callebaut Gold chocolate ganache (spiked with salted caramel Baileys). 01.01.2022 I can not express how happy this little bump of crispy, crusty goodness makes me feel. . I may not be baking cakes for others at the moment, but baking for us at home is becoming so satisfying. . Sourdough bread, the recipe i used is the Basic Sourdough from The Tivoli Road Baker cookbook by one of Australia’s best bakers @michaeljamesbakes.... . The process to make this loaf started about 36 hours before (not including the time spent building the sourdough starter). Yesterday was spent turning and folding the dough at regular intervals followed by proving time then shaping. The dough spent last night in the fridge for its final prove. This morning it was baked and has already been enjoyed with my favourite butter from @pepesaya. . Next time you think a loaf of artisan sourdough bread seems expensive, remember how long this good food takes to prepare, using premium ingredients that actually nourishes you. . I’m going to mention some of my local Sydney bakeries I love supporting. @berkelo.au, @staple_bread, @flourshopau. These guys are creating and baking some of the best bakery goods on the north side of the Harbour. 01.01.2022 Friday’s sourdough loaf... the second loaf this week. . I was really happy with the dough of this loaf, it just had a nice feel to it when I was folding and rolling it. I placed the dough in a sesame seed lined loaf tin and it was proved overnight in the fridge, in the loaf tin. . It came out nicely risen from the oven.
