We don’t really know if anyone has figured out exactly why frosted vegetables taste so good, but Ray’s theory is as follows: Plants make sugars via photosynthesis during the day. Plants use sugars via respiration 24 hrs a day. ... When days are still sunny and nights are cold photosynthesis continues as usual, but night time respiration slows or stops leading to an accumulation of natural sugars in the vegetables making them taste amazing.
