22.01.2022 Ever heard of the angasi oyster? It's about the size of your hand, sometimes called the 'southern mud' and it's from Victoria. It was also on the verge of ex...tinction a few years ago. That is, until a group from the South Melbourne Market and the Nature Conservancy launched a project, 'Shuck It, Don't Chuck It.' Used oyster and mussel shells are collected from seafood traders and restaurants, cured in the sun for a few months, and placed back in the bay. They're hoping to regenerate the reef ecosystem that used to thrive there, hundreds of years ago. And although it's early days, they've already created a new oyster reef the size of a footy field. More reef means more fish, and cleaner water too. It also means less rubbish heading to landfill with 245 tonnes of shells saved and relocated already. Winner.

We were all excited when Amy Cure and Ben Milbourne walke...d in and were able to show them around our new processing plant. This will be a part of a TV series for Channel 9 called Award Winning Tasmania, which explores Tasmania’s outstanding food and travel offerings with Tasmanian TV chef and restaurateur Ben Milbourne, as he meets the island’s best food and tourism operators to find out how Tasmania wins so many awards. Ben will investigate the award winner methods, discuss their stories and learn how the Tasmanian environment allows them to create award-winning products. We at Tarkine Fresh will be looking forward to this show to be aired Nationally later in the year, how exciting!
