All the classical of the French patissery with a twist, some morroccan treats, leek & French goat cheese tarte + red cabbage and mesclun salad, cinnamon and almond cake, apple & pear tarte... what else ?! ... ... I think the madeleines will wait next Sunday.... The French Raccoon is open till 4pm TODAY

13.01.2022 The French Raccoon was born after a conversation with my husband who was comparing my creative skills to the ability of raccoons doing things with their little hands.. The first market with this brand new name and a brand new product was on 9th September 2019... Since then, a lot has happened. Wonderful meetings, great times, market shut down and a new space to meet you all.... Located in Franklin, on the bank of our river, on March 23rd, The French Raccoon Cafe was established... It's been a very good experience since the opening. A lot of learnings, joy and creativity and a lot of talk.. I have met you at the cafe or you've been following The French Raccoon on social media... Thank you for making the connection. Although I appreciate all your little and or and , and having a platform to reach you and let you know all about what is happening at the cafe is of a great help. However, social media life is something that has it's own limit. In the way of being true to The French Raccoon ethos and continuing a healthy and local relationship with you all, The French Raccoon Cafe Facebook page and Instagram will no longer receive any feeds from 21st December 2020, date of the first day of the Christmas break for The French Raccoon. 12.01.2022 On our way to Marrawah yesterday weve stopped by 41 South fish sanctuary .. Revelation ! As I refuse to eat the fish from the Tasmanian farms because of their code of practise, salmon was not on my menu until one month ago, when I discovered 41 South..... Yesterday, The French Raccoon decided to verify the information found online and go and meet these beautiful and hard workers people who are responsible for this delight ... Lost in the bush, far from everything else,(Delorraine area) the farm opened its treasuries to us.. Welcomed by Maple, 5month old Australian shepherd, we discovered the shop and kitchen and met The Son of the family-ran -business... had a chat and went on a walk to see how the fishes are comfortably growing in their opened tank... all around us, is green, green, green.. Hazelnut trees, old growth, and the only Ginseng farm in Tasmania ..platypus.... The water for the growth of the salmons is originally caught from the Montana falls(on the property) and filtered by the native wet land... We met Mister the Father, who from his young 100 years old (even more unbelievable 64 years old in real ) invitived us to walk through the farm and take the 10 minutes walk to the waterfalls. He also told us his secret of longevity: a spoon of ginseng honey every morning Seeing how the property looks and contemplating this agile man working, a truthfully passionate person, hard worker and positive thinking driven human, we definitely can tell: this is my new topic of conversation and potentially a new product Ill be happy to serve on the French Raccoon table ! Here is my lunch, after the morning walk, where we found our Salt Bush supply for the week ahead.. Pan toasted salt bush & crispy salmon skin, 41 hot smoked baby salmon, Huonvalley squeezed lime juice and Tawny port aged in old oak barrel...
