24.01.2022 These honey soaked biscuits are known as Finikia or Melomakarona, depending on what region of Greece theyre made. Traditionally, egg & dairy free, scented with cinnamon, clove, olive oil & orange juice. I like to add a warming booze such as Brandy or Bndictine - a herbal liqueur with hints of citrus & pine - a new discovery of mine. poured over ice. ... They bake crisp (at this stage they are a perfect dunker), a quick dip in an aromatic honey bath adds a tender crumb to a crisp centre. Sounds perfect, dont you think? 22.01.2022 Cabbage Love it or loath it? I love, love, love it!! ... Its so versatile. I love it raw with a bit of salt & pepper In a salad with almonds,pecorino & parsley ( Mums recipe is the best! ) Delicious tossed in a pan with EVOO & garlic AND dont forget its the perfect fermenting food. One of my favourites is to stuff them. This batch I stuffed with lamb mince, brown rice, cinnamon, all spice, parsley, onion, & fresh tomato. If you intend on making these youll need to commit half your day to prepping + 2 hours for cooking but its worth the effort as they are sooooo gooood!!

20.01.2022 This year Im dedicating more time to preserving. With the days seemingly longer & slower I thought this would be the perfect time to kick start a new habit. I oven dried this batch of pineapple on a very low heat of 50C, overnight. I tried drying them in the dehydrator but found that too much moisture was still present which, in this sticky weather, produced the dreaded mould Fingers crossed that I keep this up. Would love to know if you preserve or have some tips for me.
19.01.2022 Mmmmmm, crispy layers of filo pastry. Hands up if you loooovvvvve pastry Personally, I think it makes all the difference if you take the time to make your own pastry. It is a labour of love but worth it! All my pies are made with an olive oil pastry, creating wonderfully, crisp layers.

Would healthy pre-prepared meals interest you? ... My thinking is order Sunday for Tuesday delivery- it would be a short menu, most likely vegetarian tray bakes that you reheat. & it would be me delivering as I dont subscribe to certain delivery companies ethos. 18.01.2022 Nurturing Healing Comforting These words are shaping what meals I want to make. They are shaping what I want to share with you. Im hoping thats what you want too... This stew may not look like much but it really is delicious. Its delicate & hearty. Celeriac, potato, parsnip, swede, & cauliflower are not equals when it comes to flavour but here Ive got the ratio right & noone is jostling for the headline. Instead of making a vege stock I added shiromiso & kombu for all their nutritional goodness & more importantly the umami factor. This is on the menu for sure!

16.01.2022 Breakfast, lunch & dinner sorted Kinda happy with these Not too fluffy like alot of hot x buns are, not too sweet, fruit nice and plump, couldve added a bit more spice. I proved them a bit too long which meant they didnt rise alot during the bake. All in all a good result

14.01.2022 Morning, How is everyone? I just wanted to update you in regards to my idea of making prepared meals ( read my last post for more info )... A big, fat thank you for your messages & ideas. I was quite surprised by the the response & Im super excited to move forward with this new venture. So, no chocolate chips or dried fruit on this commemorative day. Filled with haloumi, pecorino, graveria, sultanas & scented with mastixa, mahlepi, & mint. If youre not familiar with these aromatic Cypriot cheese pastries youre really missing out!

02.01.2022 I love a picnic! Do you? Ive had many birthdays in the park, I prefer it to going to restaurants. I love getting the gang together, putting on a big spread, playing games & listening to some Summer tunes. So, what do you bring to a picnic, you ask? Whats the perfect picnic food? #1 it has to be easy to transport- no messy spills in the car! #2 easy to eat - preferably no cutlery but if youve brought a salad you may need a fork...... #3 sharing is caring - unless your having a picnic by yourself its all about communal eating so bring something that can be portioned A pie is just perfect for a picnic! This one I made is pumpkin, carrot, & chickpea with some dazzling extras BTW - Im trading @flourmillmarkets tomorrow, 16 Feb 9-1 Come. Visit. Buy some pie.
02.01.2022 Celebrating Mothers Mum is a wonderful cook & one of her best creations & a family favourite is her Pavlova. She hasnt made it for a very long time & I really miss it. Im not playing favourites but hers is THE. BEST.EVER. One year she went rogue, tossing traditions to wind & made a meringue bowl filled with gelato. Its was soooooo gooood!!! Ill never forget that Summers day sitting in the backyard with family & friends cracking into that! #beautifulmemories Meringue i...s not my forte but I thought it would be a nice way to celebrate & thank her by making little meringue topped with a tangy lemon curd. Delicious they were but not as good as hers... These chocolate meringues didnt make it to the table, theyre sitting on my kitchen bench staring at me, begging to be eaten. #lovemymum
