24.01.2022 Today’s outdoor kitchen



23.01.2022 Last Tuesday we made a very hearty Minestrone with smoked pork bones that we served with a penne pasta, crusty bread and butter. It was a massive hit and approximately 18 people stayed for lunch that day. Here is the recipe for a smaller batch that will serve approximately 6 people. Ingredients 1 brown onion finely diced 2 stalks celery chopped into a small chunks ... 1 carrot chopped into a small chunks 1/4 head of green cabbage shredded 125g washed potatoes cut into 8ths 2 cloves garlic finely diced 1 bay leaf 1 tin diced tomatoes 2 tins water 1 teaspoon Massel's stock 2 T olive oil 1-2 smoked pork bones or 1 ham hock 1 tin Borlotti beans 1 stalk fresh rosemary 1/4 bunch fresh parsley 125 grams parmesan cheese 125g pasta (small or large) Method Heat oil in a large saucepan over lowmedium heat Add pork bones, onion, garlic, carrots, celery, potato, cabbage, rosemary and bay leaf Cook, stirring occasionally, for 15 minutes or until vegetables are softened Add stock, tomatoes and water and bring to a simmer Cook for 10 minutes or until vegetables are tender Stir in beans, increase heat to medium and bring to a simmer Heat water in another pot and add salt and olive oil and bring to the boil, add pasta and cook until al dente then strain Reduce soup heat to lowmedium and cook for a further 8 minutes or until the pasta is al dente Remove ham hocks and strip meat Stir in parsley and the stripped meat Season with salt and freshly ground black pepper Ladle pasta into bowls and top with the soup, scatter over parmesan and serve immediately with crusty bread and butter.

Homemade apple pie a custard short crust pastry filled with a cooked apple mixture of grated green apple, cinnamon, cardamom, lemon zest and fresh ginger.
