19.01.2022 This weekends event was another great successful dinner. Lots of scrumptious traditional Lebanese food had by all. The dessert was a buttery moist semolina slice, with cardamom spiced dates and walnut centre, served with cream.

18.01.2022 Made some tahini. Toasted the seed and passed it through my bullet mini blender. The trade of is you need to add sesame oil to get it turning, otherwise it sticks to the walls of the blender Easy to make just make sure you have sesame oil ready. The colour is determined by how much you toast the seeds.

18.01.2022 My little garden is looking fabulous with lots of herbs, beans and tomatoes, I might even get a good crop of grapes this year! I have growing; Mint... Continental Parsley Oregano Basil Rosemary Chilies Lebanese Eggplant Ox Heart Tomato Grape vine, red grapes Broad Beans Can't wait for the beans to be ready, so yum!

17.01.2022 Cooking at a clients house today. 25mm thick lamb loin chops marinated in 12 spices as the mains, served with a fragrant spiced basmati pilaf, batata hurah (potato, coriander, garlic lemon, chilies) and beam madammes (fava bean salad). Lamb is slow cooked for two hours so far another hour or so to go.

16.01.2022 A great evening had by all, lots of delicious Lebanese Mezza. I had a ball cooking and meeting lovely people. What can be better!

15.01.2022 Fresh baked sourdough bread for a Tuesday morning.

15.01.2022 Another great dinner served up for a family birthday party. Slow cooled double cut lamb chops marinated in 12 spices slow cooked until it falls of the bone. Lebanese chicken pasta bake, almond chicken rice and bean madammes.

14.01.2022 Working another booking. Dessert, orange blossom cream filled filo pastry rolls drizzled with honey, a dusting of icing sugar and topped with crushed pistachio and walnuts.

14.01.2022 The more I cook the more I realise that the secret to good food is ingredients, respect, thought, passion, time and care. The recipe is just a guide and without understanding and thought, it is easy to get it wrong. The limited time I spent working in restaurants made me realise that I was no more than a process worker making food in a way I would not normally. In my bussiness I would take up to six hours or more to prepare the menu, making sure it is the best I can do and ensuring everything is fresh, full of flavour, texture, fragrance and is a feast for the senses.

13.01.2022 Look what I just made. Baking right now. Lebanese semolina and minced fate cakes. Posting the finished cakes soon!

12.01.2022 Special deal!. Charcoal chicken BBQ. Get your mates together with your favourite beer and I do the rest. My special spiced charcoal chicken served with char grilled corn, Lebanese potato egg salad, tabouleh, hommus, garlic and chili sauce sauce. 10.01.2022 Since I made the sweet filo rolls, I was thinking how about some savoury ones. These variations are OMG delicious!. One variant is filled with camembert, chives and cracked pepper, and the other, creamy egg, chives and cracked pepper.

03.01.2022 Snoud El Sit, meaning grandmas wrist in Arabic. These delicious fried cream filled rolls are superbly light and absolutely mouth watering in texture and taste. I made two version, the traditional with rose water syrup and the other with a sweetened cream. Bothe are very very good!

03.01.2022 Dinner and pool party. The best way cool off! Last night's birthday dinner booking was a smash, everybody had a great time, great food and great company!

03.01.2022 Mushrooms, thyme, rosemary, garlic with butter and olive oil. Into the oven, cook, let cool down and toss with salad greens, olive oil, and balsamic vinegar. Bellissimo!

01.01.2022 Last night was a fabulous success. A lovely duck breast menu was enjoyed by the fab four ladies.

01.01.2022 Practising my hibachi cooking. I am investigating the possibility to doing a hibachi skewer menu. Prawns skewers. Large tiger prawns marinated in a Lebanese lime and spice blend, served with a tangy parsley sauce.... Shish tawook skewers. Chicken marinated in Lebanese blend of yoghurt and spices served with fresh tabbouleh. Chichinga skewers. Beef strips marinated in a Ghanaian satay blend of spices and herbs, served with a complex Ghanaian Jollof rice. Shawoorma skewers. Lamb strips marinated in Lebanese blend of herbs and spices char grilled and wrapped in spring grape vine leaves served with a tahini sauce.
