25.01.2022 A Pasta Weekend Coming up We have a fabulous Pasta Rustica Masterclass on Saturday the 1st of February. We will be making Pasta e Fagioli, a Marinara sauce with wonderful homemade pasta as well as Pasta with Cauliflower and of course amazing meat-filled Ravioli. 20.01.2022 Corona Virus Pandemic: Due to the current crisis and the Governments rules on social distancing and non-essential travel we are cancelling our existing scheduled cooking classes for the months of April 2020 and May 2020 and we will reschedule those at a later date. We will be contacting all of those people who are booked into classes in those months. We will review the situation for the classes scheduled for June 2020 and July 2020 as soon as more Government announcements h...ave been made and we will be letting you know how things will proceed. We are unable to offer guests a refund for the cancelled classes as this will put the future of our small family business into jeopardy. However, all funds will be held in credit indefinitely to ensure that guests can rebook once it is safe for us to reschedule the cancelled classes. We hope that you understand that we are not in a position at this time to issue refunds and we hope that you are happy to ride the wave with us all and meet at the end to celebrate a new beginning. We also wish to advise that we shall honour all of the gift certificates that have been impacted on by the pandemic once we are able to reopen. Our usual policy of no refund on gift certificates applies however they are transferrable. I wish to thank you for your understanding and support during these difficult times and Genevieve and I look forward to seeing you when it comes time to open our doors again. 17.01.2022 We surprised mum yesterday who was unaware that she would be in the Mercury TasWeekend. She was so pleased. What a fabulous woman "Nonna Kina" is. We are so proud of her and especially pleased that she wanted to join our Traditional Pasta Masterclass.

We will be making a delicious chicken broth with greens and tiny meatballs followed by a traditional lasagne (not your modern bolognese variety) and to finish off we will be making tiramisu with homemade Mascarpone cheese. "A Nonna Class" My beautiful mum (Nonna) who is almost 92 has finally agreed to come along to one of my Traditional Pasta Masterclasses on Saturday the 10th of October 2020 to show you how she makes Maccheroni and Orecchiette. 15.01.2022 Genevieve REALLY loves Nutella, so for her birthday yesterday, I made her a Nutella cheesecake. I had made one in the past a few years back and found it to be really sweet so I reinvented the whole cake again and this time I think I managed to get it right. The middle was silky smooth and creamy and not overly sweet. I topped it with a thin layer of melted dark chocolate and a glaze made from Frangelico which is a hazelnut liqueur. I finished it off with roasted hazelnuts from our trees and some Chilean Guava that are ripe in the garden at the moment. I love making up recipes and I really am happy with how this one turned out. Sorry folks, I wont be sharing this recipe but I will share the pictures.

14.01.2022 My mum was fabulous showing off her skills in our Nonna weekend. She is the 92-year-old matriarch of both sides of her family and is such an inspiration to us all. We loved having her on the farm. Keep an eye out for the next Nonna class. Brava la Nonna!!!!

13.01.2022 Wonderful news about stage 2 being brought forward. Genevieve and I are keen to get up and running again. We have a bit of planning to do but hopefully, we can get things moving soon. 10.01.2022 Yesterday was my beautiful daughter Genevieves birthday, so in order to celebrate, I decided to make her some yummy squid dishes to take everyones mind off self-isolation. I hope you enjoy the pictures. We made stuffed squid, along with lots of other things and last week we also had squid cooked with red wine and delicious pasta called Strozzapreti. It was so fresh and really tasty.

03.01.2022 Hello Everyone, I thought I might share my take on a good Bolognese sauce. Obviously not from my region of Italy but it does taste great. As it is not from Puglia I wont be teaching this in my classes but I can teach you how to make fabulous home-made tagliatelle to go with it. It is just a matter of holding on until this virus clears up and we can get together again. In the meantime try this at home. Let me know what you think......

02.01.2022 After many attempts at making bread and using various brands of gluten-free flour with or without Xanthan gum and having very poor outcomes, I have finally come across a brand that works!!! I recently purchased some Caputo Gluten-free flour from Passione Foods in Moonah. It is made from Gluten-free wheat starch along with other ingredients. The bread was soft and remained soft, it rose well with little yeast and did not taste of rice!! I used it to make gnocchi the following day and it was brilliant. You could not taste the difference between the gluten-free and the flour ones. So happy to find a product that works. Perhaps I can run some gluten-free classes next year...........
