21.01.2022 Spring has sprung and that means Goat's Curd, Brillat-Savarin and fresh cheeses! Spring is about freshness. This is when goats, sheep and cows are finally let out of their barns to graze on fresh grass after a long winter of feeding on grains, scraps and hay. The difference in the quality of the milk is astonishing. The fresh grass means the milk has more minerals and vitamins, but most importantly, much more flavour.... So with fresh grass comes better milk, and with better milk comes good, fresh cheese. That means we get to eat goats’ cheese like Chabichou and fresh cheeses such a Delice des Cabasses or Brillat-Savarin. These are cheeses that only mature for a few days or up to around eight weeks, so like asparagus or strawberries, their return after a long absence is welcome.
