We have stayed quiet for the past week to give space to the people who most need our attention at this time. But now is the time to support the cause and help create change. We believe there is a gap in the level of privilege in our country and that as Aus...tralians we should be reaching out our hands to the disadvantaged and marginalised. This weekend we are releasing two limited, one time only, native Australian gelato flavours: Lemon Myrtle, Saltbush Caramel & Macadamia Wattleseed & Kakadu Plum Chocolate Both of these flavours are available ONLY in 500ml tubs and by preorder through our website now. We will be donating ALL proceeds from these sales (plus tips) and matching every dollar ourselves to donate to three Aboriginal charities The Indigenous Literacy Foundation ANTaR National Wirrpanda Foundation Enough is Enough. 18.01.2022 At Pietro we are never settled on ‘good enough’ and are always developing our products to be better in quality but also fair to the farmers who produce the ingredients and to the environment that provides for us. Sometimes what has been done in the past is actually the best practice, other times we look to modern developments to alter our outlook. Over the next six months we are looking to change some of our recipes and practices to help provide a more sustainable Pietro, th...ese will be gradual steps and we will inform you of each change as they are finalised. The first major step is our gelateria, this week we have changed our cabinet to an enclosed system, what is called ‘pozzetti’ in Italian. This method of storage is the traditional way to keep gelato and is still common in Italy but there are only two other gelateria in Perth and a small amount in Australia using them. By storing the gelato in sealed individual pots we are able to keep it away from air and light which dramatically affects the quality of the gelato. But for us the biggest is advantage is that we will also save a huge amount of energy as this system is well insulated and is not an open freezer like standard display cabinets. You won’t be able to see what the gelato looks like but as is common with our flavours looks can be deceiving. Our staff are always happy to let you taste a flavour or explain it in more detail if you are unsure of a flavour.

We have been following the health crisis our world is facing closely and have already implemented some measures since Friday, including a more frequent cleaning and sanitising routine, but as of today we will be starting some bigger changes in the gelateria. We have hundreds of customers com...e through our doors and we want to limit our ability to spread the virus and also prevent our casual staff the chance of getting sick and losing wages. We love our chocolate but unfortunately the men and women who grow the cocoa beans to make it do not get a fair end of the deal, so 10% of all sales of these tubs will be given back to cocoa farmers in Africa.
