24.01.2022 MANDY’S FAVOURITE RECIPES Pomegranate and Wild Rice Salad Prep Time: 20mins... Cook Time: 20mins Total Time: 40mins Servings: 6 Ingredients: * 2-3 medium sweet potatoes, peeled and chopped * 1 and 1/2 tablespoon olive oil * Freshly cracked pepper and salt * 1 packet Long Grain and Wild Rice Mix * 1 cup Pomegranate * 1/2 cup sliced almonds * 1 packet spinach & mix leaves * 100g crumbled goat cheese or feta Lemon Honey Dressing * 1 tablespoon honey * 1 large lemon (2 tablespoons juice, 1/4 teaspoon zest) * 3/4 tablespoon red wine vinegar * 2 tablespoons olive oil * 1/2 teaspoon Dijon mustard * 1/2 teaspoon dried oregano * Freshly cracked pepper and salt Instructions: 1. Preheat the oven to 200 degrees. Peel and chop the sweet potato into small chunks. Toss the potato chunks in olive oil and sprinkle generously with salt and pepper. Toss to coat. 2. Bake for 10 minutes, flip and return to the oven for another 10 minutes, and then flip once more and bake for 10 more minutes or until the potato chunks are tender and roasted through. Watch these carefully so you don't overcook the potatoes. 3. Meanwhile, prepare the rice according to the package directions. 4. Combine the roasted sweet potato with the cooked rice in a large bowl and place in the fridge while prepping the dressing. 5. For the dressing combine all of the ingredients in a small bowl, whisk until combined. Taste and adjust (additional salt/pepper/honey) 6. Add to the cooled potato to the rice mixture. Toss with the lettuce and add the pomegranate plus almonds (you can toast almonds if desired) 7. Toss everything with the dressing and add in some feta or crumbled goat cheese to personal preference. Increase the amounts of pomegranate or almonds if desired. 8. Once dressed enjoy the salad the same day.

Total Time 25 minutes Servings: 8 serves Ingredients: Chicken: * 4 large boneless skinless chicken breasts * 2 cups chicken stock * 2 tablespoons brown sugar * 1/2 tablespoon chilli powder * 1 tablespoon salt * 1 teaspoon ground cumin * 1/2 teaspoon garlic powder Sweet Chipotle Sauce: * 1 cup tomato sauce * 1/2 cup brown sugar * 2/3 cup honey * 6 teaspoons chipotle * 1 1/2 tablespoons apple cider vinegar * 2 teaspoons worcestershire sauce * 1 teaspoons minced garlic * 1/4 teaspoon salt * Pinch of pepper Toppings & Tortillas: * Tortillas * Lettuce, tomatoes, fresh lime, guacamole, sour cream, cheese Instructions 1. Combine the brown sugar, chilli powder, salt, cumin, and garlic powder in a small bowl. Stir and then rub evenly over the chicken. 2. Place the chicken in the slow cooker and pour the chicken stock over the meat. 3. Slow Cook for 4-6 hours on high or 6-8 hours on low. 4. Once the meat is completely cooked through, drain the liquid and using two forks, shred the meat. 5. For the sauce, combine all of the ingredients in a blender or food processor. Blend or process until smooth. 6. Taste and adjust ingredients to preferences (you may want more chipotle or a little more salt or pepper). 7. Mix the sauce with the shredded chicken until completely combined. 8. Fill up tortilla shells with the mixture and top with whatever you like - sour cream, guacamole, shredded lettuce, chopped tomatoes, cheese and a squeeze of fresh lime.

Servings: 8-10 adults Ingredients: * 5 strips bacon * 1 small jalapeño pepper finely chopped * 1 pack cream cheese * 1 cup sour cream * 1 pack ranch seasoning and dressing mix * 1 and 1/2 cups extra sharp cheddar cheese * 1/4 cup spring onions * 1/2 teaspoon freshly cracked pepper Instructions: * BACON: Cook over medium heat, until crispy. Coarsely chop and set aside. * JALAPENO: Remove the seeds and finely chop the jalapeño. * CREAM CHEESE: Place unwrapped cream cheese block on a microwave-safe plate. Microwave for 15 to 20 seconds and then remove, flip it over and microwave for another 10 seconds if needed. * BEAT: Using an electric hand mixer, beat the softened cream cheese until smooth. Mix in the sour cream and the DRY ranch mix (do not prepare the mix.) Gently stir in the grated cheddar cheese, green onions, diced jalapeño, and freshly cracked pepper. You can also stir in the bacon here (it will soften) or top the dip with it if you'd like it to remain crisp. * CHILL: If you have time, chill the dip for an hour or so before serving.
