24.01.2022 I hope youre all enjoying the first week of school holidays?!! Im in Woolgoolga with my daughter staying at my mums new home. The idea of helping her unpack and shuffle furniture around was a good one as she has hurt her back but I think in sympathy my back is also soooo sore!!!... I cannot put into words what I am trying to say so for now, so I can move on and do something else today rather that hit the keyboard, hug your kids, look out for your neighbours, try to stay calm in a crappy situation, stay positive, stay hygienic, dont panic! Most of all I cannot thank you all enough for supporting this small business - its been extremely tough since being layed off in February, making this small gig my primary income, but its all of you ordering and supporting small business that has kept mine and my childrens head above water so THANKS! 23.01.2022 Good morning Sydney! I meant to post this last night but got a wee bit busy with today’s orders. Yesterday, Nikki the FLD Commodore went in for a rego check and some minor repairs. From one small business to another I can not recommend Jason (owner) from Phil’s Auto Repairs at Taren Point highly enough. His work is first class, so unbelievably reasonable and if it’s not urgent he has a few loan cars which can make your day that much easier.... I will NEVER take my car anywhere else again. I’ve had Jason look after it for nearly 1 year now and I suppose like a GP he gets to know the vehicle and knows what to do. Jason owns and operates a small business (as do I) and in times like we are in now small business really needs your support. It’s not just these times that small businesses like Jason’s needs your support but his work is so good as is so reasonable I’m sure you will be like me and never take your car anywhere else again!! Thanks Jason for keeping Fresh Lebanese Dips on the road

16.01.2022 If youre anything like me this lockdown isnt sitting too well so why not hit the kitchen! Here is an easy to cook idea to give your lunchtime sandwiches, fresh or toasted, a serious taste punch! 1) Top & tail an eggplant and peel skin with your potato peeler... 2) Slice each eggplant around 5mm ... good thing here is rustic differences is the key 3) Lay all slices on napkins and salt liberally .... allow to sit for 5 minutes until the sour juices rise ... pat all juices off the eggplant and repeat on other side 4) Heat vegetable oil in a large pan till hot and gently lay eggplant slices into oil ~ do not overlap! 5) Eggplant will cook fast ... check regularly and turn in a few minutes gently 6) Place cooked eggplant on absorbent paper and allow to cool Youre done!! You can clear wrap and refrigerate for days - add a slice on your ham & tomato roll. Enjoy

06.01.2022 Now THIS is how you cook Lahem Meshwi! Lamb leg marinated in Toum (garlic paste) lemon & oil. Have you tried our skewers yet? Get on board, you wont be disappointed. You dont need a huge charcoal grill but charcoal vs gas .... the coals win every time

01.01.2022 Planning a Lebanese feast for Christmas Day? If so I highly recommend that you start the discussion with me ASAP! Last year I had to stop taking late orders as the sheer qty was unworkable. I’ll be heading North to Coffs Harbour with my children for Christmas this year but can prepare orders for supply around the 22nd December.... Everything I make is now cryo sealed so either keeping fresh in the fridge or freezing for Christmas Day won’t be an issue. Don’t delay ~ order your Lebanese feast for Christmas today!!
