25.01.2022 How about making some truffles for a gift? We can’t go past this amazing recipe by Jade from @panaceas_pantry FUDGY TRUFFLES. 3 ingredients. Paleo friendly. ... Low in sugar. Ultra decadent. To make the truffles, you’ll need: 250g dark chocolate (70% +) 150g coconut cream 1/2 cup smooth nut/seed butter of choice. Optional: 1-2 tsp powdered herbs (like maca, or medicinal mushrooms) or 8-12 drops food grade essential oils (like wild orange, or peppermint). 1. Chop chocolate VERY finely, and place in a heat proof bowl. Set aside. 2. Heat coconut cream in a small saucepan, until just before boiling point. Immediately pour over the chocolate, and use a whisk to beat together until soft and glossy. 3. Add nut/seed butter, and mix well. Refrigerate for 2+ hours, then roll into balls about 1 Tbsp in size (I weighed mine to 25g each). You’ll need to do this step quickly, so as not to melt the chocolate in your hand. The truffles are ready to eat at this stage, or you can dip them in extra melted chocolate and then roll in crushed peanuts, coconut or whatever you like! Yum!! 03.01.2022 Organic black rice is a medium-grain, non-glutinous heirloom rice. It has a dark purplish-black color with a nutty, slightly sweet flavor. It is high in fibre, antioxidants, protein, iron and phytonutrients found in black rice help the body reduce inflammation and aid detox. It’s delicious to use in a filling salad like this; great for work lunches!... Black Rice Salad: 100gm organic black rice Juice of 1 lemon Salt & pepper to taste Drizzle olive oil 2 apples diced 50 gm cashews 50 gm cranberries 2 handfuls fresh coriander 2 sprigs Rosemary 2 tsp sesame seeds 1 tsp nutritional yeast flakes Black rice takes longer to cook than white rice. It can be pre-soaked for a few hours, or overnight, to reduce the cooking time. Then cook 1:2 in fresh water (or stock) using the absorption cooking method until tender about 35 minutes if soaked, or 50 minutes if un-soaked. Set aside to cool. Mix in a bowl with the cooled cooked black rice, cranberries, cashews, coriander and rosemary, lemon juice and olive oil. Season with sesame, yeast flakes, salt and pepper and enjoy.
