22.01.2022 Chocolate Almond Oat slices by @the_smallseed_ Recipe- 1/2 Cup vegan Butter... 1/4 C Coconut sugar 1/8 Tsp Salt 3/4 Tsp pure vanilla extract 1 1/2 C Quick oats -160g 1/4 Tsp Cinnamon powder 130g Dark Choc 1/2 C runny Almond butter 65g Roasted Almonds- roughly chopped . Place the butter into a saucepan and melt on a low heat. Add coconut sugar, salt and vanilla extract. Combine. Add the oats, stirring often so they don’t stick to bottom of the pan. Cook for 3-4 minutes. Take off heat and place into a small square baking pan or dish, lined with baking paper.Press down. Place in fridge. Next, shave chocolate with a knife into small shards. Place Almond butter into a small saucepan and heat on low for a minute or so, add the chocolate and stir, melt on low, stirring every so often until Chocolate has completely melted. You want it to be a smooth consistency. Take off heat and allow to cool for 5 mins before pouring over the oat base. Sprinkle chopped Almonds over the top, gently pushing them partly into the chocolate. Place into the fridge for a couple of hours or untill chocolate has set. 20.01.2022 Creamy oat mylk recipe from @simpleishliving. What's your favourite non dairy coffee alternative? . Recipe: > 3/4 cup of rolled oats... > 1 litre of water > 1 cup of ice (I read that heat and the blending process actually makes the oats gluey, so the ice will help keep it creamy) > 1 handful of soaked cashew nuts (kinda like the oil and fat to make it creamy) > maple syrup to taste > pinch of salt . Blend all together! Instead of squeezing the mylk - strain with a sift and a cheese cloth. . In terms of heating the oat mylk. It does turn a little gluey, but it doesn’t separate! It’s also awesome in a cold brew. This is how I prefer to drink it (You can make cookies or pancakes out of the pulp ) @simpleishliving

Creamy pesto pasta bake by @deliciouslyella This is the perfect dish to make when you're looking for something warm and comforting The creamy cashew and basil pesto coats the pasta, courgette and peas, which is then baked in the oven with a crunchy breadcrumb topping Recipe below and on her link in bio. Serves 4... 400g pasta 2 courgettes 100g frozen peas 2 slices of sourdough bread 2 tablespoons of nutritional yeast Pinch of salt Olive oil For the pesto sauce 100g cashews 125ml almond milk 1 tablespoon of nutritional yeast Juice of 1 lemon 3 roasted garlic cloves 1 tablespoon of Dijon mustard Large handful of fresh basil Pinch of salt Preheat the oven to 200C, grill setting. Cook the pasta according to the instructions on the pack. Once cooked, drain and pour back into the pan. Very thinly slice the courgettes into round pieces. Mix through the pasta, along with the frozen peas. Make the topping by placing the bread, nutritional yeast, a pinch of salt and 1 tablespoon of olive oil into a food processor and pulsing a few times until the mixture resembles breadcrumbs. Spoon into a bowl and leave to one side until needed. Make the pesto sauce by placing all of the ingredients, apart from the basil, into a powerful food processor and blending until smooth. Once smooth, add the basil and blitz a few more times until the mixture turns green but also has some chunky bits of herbs in. Pour the sauce into the pasta pan and mix well until all of the pasta is coated in the sauce. Spoon the pasta into a baking dish and top with the breadcrumb mixture. Bake for 10 minutes until the top turns golden. @deliciouslyella
