05.01.2022 Moussaka recipe 1.5kgs eggplant cut into 5mm slices and salted - set aside for an hour, rinse and pat dry. Olive oil ... 1 Brown onion finely sliced 1 tsp of fresh or dried oregano 1/2 tsp of ground cinnamon 1/4 tsp of ground nutmeg 1 kg lamb or beef mince 1 cup of red wine 400g canned diced tomatoes 1 cup of Parmesan Cook onion, oregano, cinnamon, nutmeg in a fry pan with olive oil (ask me about my From Far to Plate olive oil) until soft. Add mince and cook until brown, add wine and tomatoes. Simmer for 25 - 30 mins until thickened. Pre heat oven @190 layer eggplant, Parmesan and mince. Top layer with a thick layer of bchamel sauce and sprinkle with Parmesan now bake for 40 - 45 mins. Serve with chunky tomato, cucumber, parsley and mint salad with @kimcurrie @thezinhouse amazing Sourdough loaf. ENJOY!
