20.01.2022 Im sharing this gorgeous tree which I hope will make you feel as bright as this beautiful Melbourne spring day in honour of R U OK? Day. This plant is called Toona sinensis or Chinese Mahogany. The young spring shoots are used in chinese cooking to impart an onion flavour. The young leaves are rich in vitamin A. They can also be used as a nutritious tea.

13.01.2022 Tulsi (sacred basil) the queen of herbs! Whilst most people like using this wonderful Ayurvedic herb in tea for it’s medicinal and healing properties, I like cooking with it too. It’s wonderful in soups and stir-frys but also makes a delicious pesto. 2 cup tulsi leaves 1 cup roasted cashew nuts 1 cup olive oil... 2 cloves crushed garlic Salt & pepper to taste Blend all ingredients Boil your pasta (penne or spirals are best) In the meantime pop some olive oil and your harvested tomatoes (300 grams), any kind of tomatoes are fine but smaller ones chopped in halves or quarters are great. Add a teaspoon of paprika and when the tomatoes start to soften add the pasta and the tulsi pesto. A delicious alternative to traditional Italian pesto and super healthy. You can compliment this with a cup of tulsi tea. 1/4 cup of fresh tulsi leaves, pour in your hot water, let it steep and enjoy. The benefits are many: helps reduce stress, blood pressure, is anti depressive, antibacterial and antifungal the list goes on. 07.01.2022 A rose by any other name may smell as sweet! Thanks to Mr William Shakespeare for those words that resonate with me as I enjoy the roses in our wellness garden. Roses have the ability to lift my spirit and makes me happy. The rose has been used for centuries for its medicinal benefits and I love a cup of tea using our rose petals. Note we only use organic pesticides (soapy water) to get rid of aphids. So make sure if you want a cup of tea using your own rose petals you have...n’t used any sprays. You can use either fresh or dried petals. In either case, ensure that the petals are free of pesticides. It’s generally advised to not use roses from florists or nurseries, as these are often treated. If you’re making tea from fresh petals, you need about 2 cups of washed petals. Simply boil them with 3 cups (700 ml) of water for about 5 minutes. Once finished, strain the tea into cups and enjoy. If you’re using dried petals or buds, place 1 tablespoon of either in a cup and steep them in boiling water for 1020 minutes. Different brands may recommend specific water temperatures and brewing times. The tea can be drunk plain or sweetened with a little honey.
