18.01.2022 DAY 5: Biripi Aboriginal Corporation Medical Centre Today we met with staff and clients of Biripi ACMC, a place that provides culturally appropriate health and well-being services to their community. Topics of the day included:... Chronic inflammation and ways to reduce this Healthy fats The health benefits of legumes and how to include them in the diet - in really delicious ways! Increasing food variety and making the most of every mouthful Easy meal ideas that require limited preparation We had participants who tried legumes for the first time (and loved them), and those who don’t like tuna but loved the tuna risotto and want to cook it at home - practical nurition education at its best! 15.01.2022 FROM BOLOGNESE TO COTTAGE PIE Here is one for the weekend... Make a double batch of bolognese sauce to enjoy pasta one night and a cottage pie the next. Your family or future self will thank you! ... Some pointers Before purchasing any vegetables, see what needs using up to make the bolognese sauce e.g. zucchini, carrot, capsicum, celery etc. Add a can of brown lentils (don't forget to drain and rinse first) to bulk up the bolognese and reduce the cost per serve To make the cottage pie pour leftover bolognese sauce into a greased baking dish, top with mashed potato and grated cheese. Bake in the oven for approx. 20 minutes at 180/160C fan-forced. If you live on your own, freeze portions of bolognese size and cottage pie for quick and easy meals. 14.01.2022 Today marked the end of the Hawkesbury Food Explorers program. We finished the program with a Christmas lunch that all the clients thoroughly enjoyed. This program has allowed clients to make ongoing change: I now eat breakfast everyday and feel more energetic Thankyou for allowing me to feel confident enough to try new foods... I have enjoyed every single session, this is the first time in months I’ve been able to socialise Peppercorn

This community has been through a lot, with emotions still very raw from the November fires, but today a sense of community, and the willingness to engage in conversation was present.... Like every day so far, we met different groups of people with different experiences and challenges. We met:... Amazing members of the RFS (thank you)! A wonderful young person who is overcoming barriers to learn life skills and gain independence and confidence Friends supporting each other People living on their own wanting to care for themselves and be inspired A support worker who wants to help her clients cook and eat well Volunteers who cook for their vulnerable community members and want to create healthier meals We presented in a community garden and a beautiful town hall showing that we can bring our education and fun to any community.
