16.01.2022 FERMENTATION PROCESS After gently pitching the yeast, we leave it in a temperature-controlled spot for 48 hours to let it do its job of converting the sugars into alcohol. During this fermentation process, yeast produces the particular compound set that builds the aroma, complexity and character we are looking for - which makes it one of the most important flavour components of producing whiskey.
