23.01.2022 Li Sun Exotic Mushrooms are in store now! The History behind these tunnel grown mushrooms is astounding. During 1863 a single railway tunnel was constructed between Mittagong and Bowral, as a way through Mount Gibraltar. After the completion and use of the railway for some years a duplication of the tunnel was undertaken just beside the original tunnel. When the new tunnel was opened in 1919 the original railway was abandoned. Until the end of WWII the tunnel was used to st...ore explosives and equipment for the Air Force. In post-war years abandoned tunnels were used to cultivate edible mushrooms. A growing business was established in mid 1950s located in the Mittagong to Bowral railway pass. In 1987, Dr. Arrold founded the current mushroom operation. The unique environmental conditions for growing with low temperature and high humidity create the perfect growing conditions for exotic mushrooms. Come in and check out these amazing Mushrooms today! 12.01.2022 Warm up this winter with our amazing variety of spuds! If you want to boil, fry, bake or mash... We have a potato that is best for you! Beat the cold this week with this yummy potato soup!! Ingredients... * 55g butter * 425g potatoes peeled and diced * 110g onions, diced * 900ml chicken or vegetable stock * 120ml creamy milk * Salt and pepper to taste * Tom’s fresh herbs to garnish Method 1. Melt the butter in a heavy saucepan. When it foams, add the potatoes and onions and toss them in the butter until well coated. 2. Sprinkle with salt and pepper. Cover with a lid and sweat on a gentle heat for approximately 10 minutes. 3. Meanwhile, bring the stock to the boil. When the vegetables are soft but not coloured add the boiling stock and continue to cook for about 10-15 minutes or until the vegetables are soft. 4. Add the milk and purée the soup in a blender or food processor. Taste and adjust seasoning. 5. Serve sprinkled with a few freshly chopped herbs.
