25.01.2022 First crack at some brisket pastrami. Turned out pretty good. Rub is coriander heavy with some szechuan pepper for a bit of a kick. Brined for a week then smoked for 6hrs and finished off in the oven for another 3hrs. Thanks to Glenunga Gourmet Meats. The Meat Project for the tasty brisket #lownslow #homemade #pastrami #brisket

25.01.2022 Bit of a cook up today. Brisket, charred cabbage & corn, jalapenos with prosciutto plus corn bread fried jalapenos and pickles and a blue cheese sauce.

22.01.2022 Porterhouse #pastrami, brined for a week, #smoked #lownslow over @heatbeads #charcoal with cherry wood until 165F then wrapped and in the oven until 205F. Rub is very coriander heavy with a bit of pepper and a pinch of salt. Turned out way better than expected #reubensandwich next stop! @ Adelaide, South Australia
