12.01.2022 FRIDAY DRINKS: Hemingway's Special Daiquiri (the Papa Doble) During one of Ernest Hemingways junkets, he frequented a bar in Havana called La Floridita Bar, where he drank so many daiquiris, that the bar ended up naming the drink after him I N G R E D I E N T S... 3 1/2 shots of white rum 1 shot of maraschino liqueur 1 shot of grapefruit juice (fresh) 1 shot of lime juice (fresh) Optional: 1/2 a shot of simple syrup Garnish: lime wheel I N S T R U C T I O N S 1. In a cocktail shaker filled with ice, pour the rum, maraschino liqueur, and grapefruit and lime juices. Add the simple syrup if desired 2. Shake well 3. Strain into a chilled cocktail glass 4. Garnish with a lime wheel TIP: Mix it up by adding 1 1/2 cups of shaved ice if you prefer a frozen daiquiri instead. 06.01.2022 RECIPE: Apple Cake with Caramel Frosting (Paleo/GF) I N G R E D I E N T S CAKE: 3/4 cup coconut flour... 1/2 tbl baking powder 1 1/2 tsp ground cinnamon 1/4 tsp sea salt 1/4 tsp ground nutmeg 1/8 tsp ground cloves 4 eggs 1/4 cup avocado oil or coconut oil 1 tsp vanilla extract 1/4 cup pure maple syrup 1/2 cup full fat canned coconut milk 1/2 cup grated apple (peeled and cored) 1/2 cup finely diced walnuts FROSTING: 3/4 cup homemade dairy free caramel sauce 1/2 cup coconut cream (the solid part on top of a refrigerated full fat can of coconut milk. It will take 1-2 cans depending on the brand) 1/2 tsp ground cinnamon 1/4 tsp vanilla extract I N S T R U C T I O N S CAKE - Preheat the oven to 175C and line a glass 20x20cm baking dish with parchment paper - In a medium size mixing bowl, whisk together the coconut flour, baking powder, cinnamon, salt, nutmeg, and cloves. - Add in the eggs, maple syrup, oil, vanilla extract, and coconut milk - Let the cake batter sit for 5 minutes while you peel, core, and grate the apples with a cheese grater -Finely dice the walnuts, and add to the mixing bowl along with the shredded apples.
