25.01.2022 At the time of our last post, the weather had been kind, but WINTER IS OFFICIALLY HERE! Winter brings with it glorious citrus Mother Natures way of providing us with vitamin C to help fight off colds and infection. So todays recipe is a deliciously moist orange cake, taken from a cookbook that my mum has been using since I was little. You dont need to ice this cake, you can simply dust the top with some icing sugar; but if you do prefer icing, try using a tangy lemon ici...ng. Use the rind and the juice of a lemon, rather than lemon essence, and drizzle the icing over the top, letting it drip down the sides. Enjoy! MOIST ORANGE CAKE cup milk 2 eggs teaspoon vanilla essence grated rind of 1 orange 2 tablespoons orange juice 1 cup + 2 tablespoons self-raising flour 1 cup sugar 2 tablespoons butter, melted 1. Heat oven to 160 C. Grease a 9 ring tin. 2. Place milk, eggs, vanilla essence, rind and juice in a bowl and mix together until combined. 3. Add sugar and flour then mix until blended. 4. Finally, add melted butter and beat at high speed for 3 minutes. 5. Pour batter into tin and bake for 30 mins. or until skewer comes out clean.



25.01.2022 Speaking of autumn produce, pumpkin is also plentiful at the moment. Most people associate pumpkin with savoury dishes, but its natural sweetness makes it great for baking. Heres a quick and easy recipe to try... EASY PUMPKIN MUFFINS 2 cups plain flour (you can use wholemeal)... 1 1/2 cups brown sugar 1 tablespoon baking powder 1/2 cup non-fat milk powder 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 425g pumpkin puree* 1. Preheat oven to 180 C (350 F). 2. Grease a 12 cup muffin pan or line with muffin papers or large patty pans. 3. In a large bowl, mix dry ingredients together, then add pumpkin puree and mix until smooth. 4. Spoon equal amounts of batter into the prepared muffin pan. 5. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre of one comes out clean. 6. Can be served warm or cool. Spread with a dash of butter, if youre feeling indulgent. Can be frozen too. *To make pumpkin puree, simply peel and chop your pumpkin then place in a saucepan. Cover with boiling water and cook until very soft. Drain well and mash with a fork or potato masher. Try cooking more than you need, then storing in the freezer for future use.

16.01.2022 Were heading into the last couple of weeks of autumn, which means that winter is just around the corner. Were lucky here in Melbourne, where were still getting glorious sunshine, but as the leaves start to fall and the weather gets cooler, more time will be spent indoors, and what better way to spend that time than baking? With that in mind we thought wed share a few autumn-inspired recipes with you over the last days of May.

15.01.2022 We found these beautiful little autumn-tree cupcakes at Not Your Mommas Cookie, and we had to share them with you as our final autumn recipe. You can follow this recipe, or make any flavour cupcakes you like; its the decoration we love! These little trees were made with candy melts, and the leaves were piped with a leaf tip, BUT, you could make the trees with melted chocolate and use autumn leaf sprinkles (available from cake decorating stores) to make life a bit easier. Wed love to see your versions of these little beauties!

03.01.2022 The autumn months bring an abundance of juicy apples to our grocer shelves, so we thought wed take advantage of this beautiful produce and share with you a recipe for Apple Tea Cake. This takes us back to our childhood. Home Economics class, to be exact. This was one of the first things we learned to bake, and remains a favourite. The recipe is for a 7" cake, but you can instead make 10 little cakes by using a muffin pan instead of the cake tin: APPLE TEA CAKE Cake:... 60g butter, softened 60g brown sugar 1 egg 4 tablespoons milk, at room temp. 1/2 teaspoon vanilla essence 125g self-raising flour, sifted pinch of salt 1 apple, peeled and thinly sliced Topping: 3/4 teaspoon cinnamon 1 tablespoon caster sugar 1. Heat oven to 180 C (350 F). 2. Grease 7" tin (or line muffin pan with patty pans). 3. Cream butter and sugar. Add egg and beat well. 4. Mix in milk, essence, flour and salt. Place in tin. 5. Arrange apple slices on top and sprinkle with cinnamon and sugar. 6. Bake for 25-30 mins (around 20 mins for patty cakes).
