24.01.2022 Kerala Chick'n Curry . Today's lunch is leftovers from last night's dinner, a delicious Keralan curry made with vincentvegetarianfood mock chicken and noworriescurries Kerala chicken spice blend. I actually didn't deviate from the instructions on this one too much, but I did temper some curry leaves and green chillis in oil to add to the curry for some extra fragrance.... . I added the mock chicken once the potatoes had cooked to become soft, because unlike chicken this mock chicken doesn't take long to cook. This prevents it going too soft or waterlogged. This would also taste really nice with tofu or just a big mix of veggies . I purchased the mock chicken from inthepantrygroceries, my fav Asian grocer . 19.01.2022 How good do these look? Sourdough Pizza Scrolls . Yesterday I made some dough with the vague intention of baking a loaf, but in the end I couldn't be bothered shaping it, so I just put the dough in the fridge to be dealt with later. In the end I made these deliiish pizza scrolls and honestly best idea I've had all week. This recipe is pretty approximate, as I made it up as I went along ... . Ingredients: 1 kg of sourdough at about 78% hydration proved overnight in the fridge, or any pizza dough 1 cup pasta sauce 1 cup cheesy bechamel (recipe posted on my pasta bake) 1/2 block damonavegancheese smoked mozzarella 5 slices vincentvegetarianfood smoked ham Salt and pepper to top Drizzle olive oil . Method: 1. Make your bechamel, grate your cheese, and chop your ham into small pieces. Keep half raw to top, and toast half in a pan til lightly crispy to put inside the rolls. Preheat oven to 230C 2. Take half the dough and spread or roll onto a floured surface into a rectangle about 1cm thick. Layer half the bechamel, half the pasta sauce, and sprinkle half the toasted ham pieces over the dough. 3. Carefully roll the dough, then with a knife or metal dough scraper cut into 3 or 4cm wide lengths. Carefully place each scroll on a tray lined with baking paper. Repeat with the second half of the ingredients. 4. Top the scrolls with grated damona cheese and uncooked ham slices (these will crisp as it bakes). Sprinkle with salt and pepper, and drizzle with olive oil. 5. Bake for 15min, or until cooked through. . You can make scrolls with anything inside, the bechamel worked beautifully as an alternative to cheese and could be made without cheese if needed.
