Ingredients - Serves 6 400g Cauliflower 120g Onion 5mL Olive Oil 200g Carrot 150g Zucchini 150g Eggplant 500g Lean Beef Mince 5g Garlic 400g Pasta Sauce 100g Light Ricotta 5g Vegeta Gourmet Stock 5g Curry Powder 1. Heat a large pan and add oil. 2. Chop onion and garlic and add to pan to brown before stirring in mince meat. 3. Chop carrot, zucchini and eggplant then stir into pan and add pasta sauce, stock and curry powder. 4. Boil cauliflower and then mash before adding ricotta. 5. Carbs: 7.9g Protein: 13.7g Fat: 12.9g Ingredients (Serves 8) 100g Almond Meal 46g Medjool Dates 15g Coconut Oil 20g Coconut Flakes 5g Vanilla Essence 45g Vision Banana Protein Powder 5g Cinnamon 2 Whole Eggs 100g Light Cottage Cheese 100g Plain Yoghurt Method 1. Pre heat oven to 180 degrees. 2. Using a food processor, blend almond meal, dates, coconut flakes and melted coconut oil to make the base. 3. Press the crust ingredients into a baking dish and bake for 10 minutes before allowing to cool. 4. Combine the remaining ingredients in a food processor until smooth and then pour over base before returning to oven and baking for a further 25 to 30 mins. It is recommended to leave the oven door partially open to prevent the cheesecake cracking. 5. Carbs: 8.1g Protein: 24.3g Fat: 8.4g Ingredients (Serves 6) 500g Chicken Mince 100g Grated Haloumi 250g Grated Zucchini 1 Egg, Lightly Beaten 50g Cornflake Crumbs 10mL Olive Oil Method 1. In a large bowl, combine mince, haloumi, zucchini, egg and cornflake crumbs. Season well with salt and pepper. 2. Form into small patties and refrigerate until ready to cook. 3. Heat oil in a large non-stick fry pan over gentle heat. 4. Cook patties for 4-5 minutes on each side or until cooked through. 5. Preheat oven to 170C. 2. Toss apples with lemon juice and cinnamon. 3. Transfer to a 1 litre baking dish with 50ml water. Bake for 10 minutes whilst preparing topping. 4. Sift flour into a mixing bowl and stir in rolled oats. Rub in margarine until mixture has a crumb consistency. Stir in brown sugar. 5. Remove baking dish from oven and stir in sweetener. Sprinkle apples with crumb topping to evenly spread. Bake for 30-35 minutes or until golden brown. 6. 08.01.2022 Mountain Bread Lasagne Carbs: 36.6g Protein: 29.5g Fat: 9.7g Ingredients (Serves 4)... 150g Capsicum 300g Beef Mince Premium 350g Eggplant 10g Garlic 4 Barley Wraps (Mountain Bread) 150g Onions 40g Parmesan Cheese 100g Ricotta Cheese 400g Crushed Tomatoes (Canned) 300g Zucchini Method: 1. Chop capsicum into quarters and roast under the grill for 15 mins until skin blisters and blackens. Roast capsicum in oven 180 C for 10 mins. Remove and place capsicum in plastic bag for 10 mins, once cool remove skin from capsicum. 2. Cut zucchini and eggplant into 5mm thick slices. Brown under grill for 10 mins. 3. Cook onion and garlic in non-stick fry pan, stirring until onion is soft. Add mince and cook till brown then add tin of tomatoes. 4. Place one slice of mountain bread into bottom of oven proof dish. Layer with mince, eggplant, zucchini and capsicum and another sheet of mountain bread until all mixture is used up. 5. Spoon ricotta over top of lasagne and sprinkle with parmesan cheese. 6. 07.01.2022 Weekend Breaky Banana Granola C: 22.3g | P: 5.5g | F: 12.1g Per Single Serve Ingredients Serves 12 250g Rolled oats... 250g Banana 80g Almonds 80g Pepitas 5ml Vanilla essence 1g Himalayan salt 60g Coconut oil 60g Maple syrup Method 1. Preheat the oven 200C and line a baking tray with baking paper. 2. In a large bowl, combine oats, almonds, pumpkin seeds, vanilla and salt. 3. In a separate bowl add coconut oil, maple syrup and bananas. Use your hands to mix the ingredients completely smooth. 4. Add the banana mixture to the dry mixture and combine well, using your hands, for about a minute or until everything is well coated and clumpy. 5. Turn out and spread the granola in an even layer on the baking tray. 6. Place in the middle of the oven and bake for 15-20 minutes, check at around 10 minutes and turn the granola over with a wooden spoon. 7. Allow to cool completely before putting in a container. 8. Ingredients Serves 1 150g Chicken breast, lean Cajun seasoning 150g Capsicum 75g Red onion 30g Mixed salad leaves 50g Cherry tomatoes 10g Balsamic Vinegar Juice of one lemon Method 1. Cook chicken and add Cajun seasoning to taste. 2. Add capsicum and red onion to a hot frying pan and cook until they still start to discolour, this should only take a few minutes. 3. Make salad by adding chopped cherry tomatoes to leaves and drizzling with balsamic and lemon juice. 4. Skewer alternate chunks of chicken, onion and capsicum. 5. 04.01.2022 Citrus Bomb Protein Balls Ingredients 2 cups Shredded Coconut Zest of 2 lemon Zest of 1 lime... 4 Tsp Lemon Juice 3 Tsp Lime Juice 3 Scoops Vision Vanilla Protein powder. *Desiccated Coconut to coat balls. Method Place all ingredients except desiccated coconut in a blender. Blend on high till consistency resembles a dough like appearance approximately 30 sec to 1 min. Roll 1 teaspoon of mixture in your hand then roll in desiccated coconut to coat. 01.01.2022 Pumpkin Cacao Muffins Ingredients: 3 1/2 cups of old-fashioned oats 2 cups canned pureed pumpkin or fresh pumpkin puree 1 cup applesauce... 1 cup fat-free vanilla Greek yogurt 1/2 cup vanilla protein powder 1 cup baking Stevia 3 tsp cinnamon 4 tsp baking powder 1/4 cup of cacao chips 1 tsp baking soda 1 tsp pumpkin pie spice Instructions: 1. Preheat oven to 350 degrees F. 2. Puree oats in a food processor. 3. Mix oats with the rest of the ingredients. 4.
