21.01.2022 One of my all time favourites and right up there in the contention for the finest eating Australian fish: Pearl Perch, Glaucosoma Scapulare. Bake whole or butterflied, pan grill in cornflour with butter, crumb or batter. Flesh is almost clear, buttery and dense with large white flakes, a very characterful mild and sweet flavour. This versatile and immensely satisfying eating fish is seldom seen in retail. 17.01.2022 *sold out* What a wonderfully tasty way to boost your immunity, this has been my favourite of the week! Oysters are natures finest source of zinc, proven by CSIRO to have greater efficacy than vitamin C to ward off a cold. We ate a tub this afternoon straight after production- (just to test of course) and we loved it. Im taking another tub home tonight to share with my wife, it is our kind of food. ... Such a powerfully satisfying smoked oyster flavour, silky texture and rushes of salt and smoke roll over the palate as pops of pepper and herb sharpen for balance, its a bit of a sensation. Be quick, as a test for this recipe I only made 15 tubs, will have only 13 left for the counter tomorrow now that I have secured mine. Next batch I will count exactly how many oysters hit the smoker to make this beautiful spread, it would be around 250 or so which is just incredible, a real powerhouse of immunity in pate form. 14.01.2022 Im just not sure that you can find pickled Australian cuttlefish anywhere else! We have been making these for four or five years now and they just continue to grow in sales. The texture of cuttlefish is more tender and slightly more sweet than calamari. These marvellous cuttlefish were from the Northern Territory, cleaned in store by Alex, poached and tubbed by Taryn in an all Australian blend of fresh herbs, garlic, onion and chilli and then douse liberally in vinegar.

07.01.2022 Very rarely in the last few decades have I ever found beautifully small salmon like this, around the 1.5kg average weight. I was excited to see them this morning, they are just perfect quality; tensed, glistening and gorgeous. To be able to bake a salmon for four with minimal left overs is such a rarity, the average size of salmon I usually take is 6-7kgs, which is enough for a football team. Itd be rather cold being in the water before sun up, sorting through these in the trap (the tunnel netters jump in the water and hand sort their catch whilst everything is still alive, hence they take only exactly what they are able to, all undersize fish and no take species are placed outside the trap to swim away. Its an old... fashioned commonsense technique of fishing that in the modern world of sustainability is genius). Each piece can be worth many times more than the fish itself which has for some years created undue pressure on the species. As a protected/ very limited species in many areas of Australia due to so many trying to harvest the swim bladder illegally, each piece should be accompanied by a tag. These very special fresh sea scallop pies are our fastest selling housemade product without a doubt. If you have had one from us you’ll know of their capacity to satisfy a very large scallop craving with at least a dozen scallops in every pie.... If you’ve never tried one from us you really should, the amount of comments and feedback we receive every week whilst the season runs is humbling to say the least. It certainly drives us to make as many as we can whilst we can! They will freeze for three months quite easily as they are made on all fresh ingredients. They cook beautifully from frozen (140-150c for 50 minutes or so) and many of our customers stock up before the fresh season on scallop closes.
