25.01.2022 Hoowhee! What a roller-coaster of a week hey!? I'm sure emotions right now are running high all over the state, but I want to take a little moment to say thankyou to; 1. My staff, at 1pm on Wednesday I needed to double my staff in about 10 minutes, and you were ALL spectacular; you rocked up like rockstars without hesitation and just seeing my S.O.S video turned up to help! I am so grateful you have chosen to work at Waggon Wheels! 2. Our amazing customers, we hit our COVID... limit many many times over but you were all so respectful and patient and listened to the covid marshal and kept your distancing in place. It was our pleasure to look after you and help you when things got crazy. 3. Kelly and Jase @banana_boogie what a shitfest for Bakeries! 25.01.2022 Hoo-wee! What a brussel sprout of a week. Im going to dedicate this post to not only the incredible support from the community around us, but also from the 30 spectacular staff that we employ. Within the last two rollercoaster weeks weve turned our business on its head to do the best we can to keep our community fed with not only the best bakery goods in hills area (shoutout to Banana Boogie Bakery), the best two butchers in Blackwood (shoutout to Blackwood butchers ...and Blackwood Country Meat) and your greengrocery goodness from the Wheel. All of our staff have gone above and beyond with exceptional customer service, exceptional adaptation to change and have done it all with a smile on their face. You guys are the real MVPs! This is the first time weve done anything of this nature and with a few hiccups along the way, every member of our tribe has been kind, grateful and forgiving and for that, we are eternally thankful.

22.01.2022 This meal is my housemates favourite. Its a staple in our house for ease; flavour and a power packed health punch. Free Range Crispy Skin Chicken in a Lemongrass Bone Broth. They always tell me this dinner is like one of my hugs- healing and warm. *shucks* This broth is full of collagen, gelatin, and incredible anti-inflammatory foods. It is one of the best healing and repairing things you can feed your gut for its health.(If I do say so myself.) In this mix; Chicken Bone... Broth, Umami Mushroom Broth (good flavour substitute if you are vegan ) garlic, ginger, shallots, coriander roots, turmeric, chilli, thyme, lime leaves, lemongrass, swiss button mushroom salt and pepper. It simmers while you crisp the chicken thigh in butter, salt and pepper, then after youve sliced and diced it, place it in the broth with fresh bok-choy, bean-shoots and fresh coriander.
